- In a large saucepan, cook the onion and green pepper in 1/2 cup water until tender. Add beans, tomatoes and tomato paste. Stir in chili powder, salt if desired, pepper and remaining water; bring to a boil. Reduce heat; cover and simmer for 20 minutes.

I make many types of chili, but my wife likes this version best. It is easy, virtually fat-free, and family-friendly. It makes a big pot but freezes well. I spice up my own bowl with hot sauce, jalapenos,fresh onion, whatever.

- Using a large pot, saute the chopped vegetables in the olive oil until soft.
- Crumble in the fake meat and stir a bit.
- Add all of the canned stuff and stir.
- Add all of the seasonings and simmer for 30 minutes, adding a bit of water if you like it thinner.
- Taste and tweak; if you like it spicier I recommend the chipotle powder. Hot sauce will do it too.

- In a large pot, saute ground beef with onions, peppers and garlic until meat is cooked through and vegetables are soft.
- Add stewed tomatoes, tomato suce, beans, and corn stir together.
- Add seasonings and simmer for 30 minutes adding water if you like it thinner.
- Add salt and additional seasonings to taste.
- Serve hot with shredded cheese, sour cream, jalapenos and/or hot sauce to suit your tastes.
