CHICKEN CORDON BLEU I

This entree is easy and delicious! It's one of my husband's favorites! Try to use the largest chicken breasts you can find so you'll be able to roll them easier.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Coat a 7x11 inch baking dish with nonstick cooking spray.
  • Pound chicken breasts to 1/4 inch thickness.
  • Sprinkle each piece of chicken on both sides with salt and pepper. Place 1 cheese slice and 1 ham slice on top of each breast. Roll up each breast, and secure with a toothpick. Place in baking dish, and sprinkle chicken evenly with bread crumbs.
  • Bake for 30 to 35 minutes, or until chicken is no longer pink. Remove from oven, and place 1/2 cheese slice on top of each breast. Return to oven for 3 to 5 minutes, or until cheese has melted. Remove toothpicks, and serve immediately.

Found this online -- looks simple to put together and yummy! Original recipe requires frying -- but I wonder if it could not be completly done in the oven. If someone tries this before me and wants to be brave and skip the frying step and bake longer, let me know your changes and I will edit the recipe. Thanks!!

Steps:

  • Preheat oven to 350 degrees.
  • Combine the chicken, ham, and egg in a large bowl until well blended.
  • Gradually add bread crumbs until the mixture loses its stickiness and can be easily formed into balls.
  • Form the chicken mixture around the cheese cubes, forming 2 inch balls. Place on a plate.
  • Heat 1 1/2 inches of oil in a deep skillet to 350 degrees. Fry the balls until the outsides are golden brown, about 4 minutes. Drain on paper towels, and place in baking dish.
  • Bake in preheated oven until cooked through and cheese is soft, about 20 minutes. Cool briefly before serving.

Steps:

  • Flatten chicken breasts to 1/8-in. thickness; spread butter on the insides. Sprinkle with thyme. Top with a slice of ham and cheese; roll up tightly. Wrap each with 2 slices of bacon and secure with toothpicks. , In a small bowl, beat eggs and milk. Place flour in another bowl. Combine the bread crumbs, garlic powder, oregano and cheese. Dip each chicken breast into egg mixture; dip into flour to coat. Dip each again into egg mixture, then coat with crumbs. , Place on a greased baking sheet. Bake, uncovered, at 350° for 40-45 minutes or until chicken juices run clear.

Steps:

  • ~To prepare the bites: * Place the chicken and ham into a medium-size bowl. * Melt the butter in a medium saucepan over medium-high heat. * Add the onions and sauté until translucent. * Stir in 4 Tbsp flour and cook for a minute. * Add the milk, mustard, salt, pepper, and paprika. * Stir and heat until the sauce begins to simmer and has thickened. * Fold the sauce into the bowl with the chicken and ham. * Spread the mixture out onto a baking sheet and refrigerate until cool and firm, about 30 minutes. ~While mixture is cooling, make the dipping sauce. * Melt the butter on medium-high heat in a medium saucepan. * Add the flour and stir for about a minute. * Add the milk and chicken stock and continue to stir while heating. * When the sauce has almost begun to simmer and has thickened, add the cheese, salt and nutmeg. * Stir until the cheese has melted and sauce is smooth. * Hold on very low heat until ready to serve, stirring occasionally. ~To bread and cook the bites: *Heat a deep fryer or Dutch oven with oil to 375°F. * Take the cooled mixture by rounded tablespoonfuls and roll into balls. * Place them on a clean baking sheet. * In separate shallow bowls, place 1 cup flour, eggs, and crumbs. * Coat the bites 4-6 at a time with flour and then dip and coat completely with egg. Finally, roll the bites in the bread crumbs, coating completely. * Place the bites back onto the baking sheet. * Deep-fry the bites in batches of 6-8 at a time for about 3-4 minutes, or until deep-golden brown. * Serve with the dipping sauce.

1/4 lb thinly sliced smoked deli ham, finely chopped
3 Tbsp butter
1/3 cup minced onions
1 cup + 4 Tbsp flour, divided
1-1/4 cup milk
2 tsp Dijon mustard
2 tsp salt
1/2 tsp black pepper
Pinch of smoked paprika
3 eggs, beaten
1-1/2 cups cornflake crumbs
Oil, for frying
~For the Sauce:
2 Tbsp butter
2-1/2 Tbsp flour

  • Pat the chicken dry with paper towels. Use a sharp knife to cut each chicken breast in half horizontally to create two chicken breast halves. Place the chicken breast halves between two sheets of plastic wrap and use a meat mallet or rolling pin to pound them into thin and evenly (be careful not to pound so hard that the meat tears.).
  • Top each pieces of chicken with a slice of ham and a ham handful of shredded cheese. Roll tightly, tucking the sides a little, and place on a new piece of plastic wrap.
  • Wrap the chicken tightly in the plastic wrap, pinching the excess plastic on the sides to create a tootsie-roll shape and twisting them to create a firm chicken roll. Refrigerate the wrapped chicken bundles for at least 30-minutes or up to one day in advance.
  • Preheat oven to 400 degrees F. Remove chicken from fridge, unwrap and season with salt and pepper. Add cornflakes to a food processor and pulse into fine crumbs. Add crumbs to a shallow dish or pie plate. Melt butter in a separate shallow dish.
