DECADENT SAUSAGE AND CHEESE QUICHE (MAKES 2)
These are so delicious that even though the recipe makes 2, I have a hard time sharing because they freeze so well.

Steps:
- Preheat oven to 350 degrees.
- Brush pies shells with egg yolk and bake 10 minutes, according to package directions.
- Saute sausage and onions together until sausage is browned. Drain well.
- Combine eggs, milk, and nutmeg.
- Arrange layers. Sausage mixture, Swiss cheese then cheddar cheese in pie shells.
- Repeat layers.
- Pour egg mixture over all.
- Bake in the 350 degree preheated oven for 45 minutes.
- Combine Parmesan cheese and paprika.
- Sprinkle over quiches.
- Bake 15 minutes longer.
- Remove them from oven and let them (stand/rest) for 10 minutes before slicing.

SAUSAGE QUICHE CASSEROLE
Steps:
- Unroll one tube of the rolls; press dough onto the bottom and up the sides of a greased 11x7-in. baking pan to form a crust. Seal perforations. Sprinkle sausage over crust. In a skillet, saute onion in butter until tender; add mushrooms. Spoon over sausage. Top with cheeses and pimientos. In a bowl, beat eggs, cream, parsley, salt, pepper and garlic powder; pour over all. Unroll second tube of rolls; seal perforations. Cut dough lengthwise into 1/2-in. strips. Use strips to form a lattice crust over top of quiche. Sprinkle with paprika. Bake at 350° for 50-55 minutes; cover loosely with foil if browning too quickly. Let stand 10-15 minutes before cutting.

Steps:
- Cook sausage.
- Sauté onion in pork fat.
- Combine cheese and flour and stir in with sausage and onion.
- Pour in pie shell and mash it down.
- Mix all other ingredients together and pour in pie shell.
- Cook at 375°F for 35 to 40 minutes.

Steps:
- Preheat the oven to 375 degrees F (190 degrees C).
- Unroll each crust into two 9-inch pie pans.
- Heat oil in a large skillet over medium heat. Cook celery, onion, and garlic in the hot oil for 1 to 2 minutes. Add sausage, breaking apart to brown; sprinkle in sage and continue browning until no longer pink, 5 to 7 minutes. Remove from heat. Add cottage cheese and mix well.
- Divide meat mixture evenly and spoon into each of the two pie crusts.
- Whisk eggs, milk, tarragon, salt, and pepper together in a mixing bowl. Pour egg mixture over meat mixture in the pie crusts. Sprinkle Cheddar-Jack cheese over the tops.
- Bake, uncovered, in the preheated oven on the middle rack until tops are puffed and golden brown, about 40 minutes. Remove from the oven and let stand for 5 to 10 minutes before slicing.
