  • Peel and slice the gala melon into 1/2-inch semi-circle slices. Wrap a slice of prosciutto around each wedge and arrange on a platter.

Prosciutto and Melon Soup image

Steps:

  • Preheat the oven to 350 degrees F. Place the prosciutto slices on a foil-lined baking sheet. Place in the oven and bake until firm, golden around the edges, and almost crisp, about 18 minutes. Set aside and let cool.
  • Place half the melon in the blender with half the tomatoes. Pulse the blender until the mixture is pureed. Pour the soup in a large bowl. Puree the remaining melon and tomatoes and add to the bowl. Add the salt and pepper.
  • Ladle the soup into bowls. Crumble the cooled prosciutto crisps over the top of the soup. Sprinkle with basil and serve.

1 cantaloupe melon, cut into chunks (about 5 cups)

Steps:

  • Peel, seed and clean cantaloupe; cut into bite-sized pieces and set aside.
  • In a separate bowl, mix sugar and strawberries by mashing together with a spoon.
  • Mix in oil, lemon zest and ginger into the strawberry mixture and combine well.
  • Arrange the melon and prosciutto on a plate, spoon salsa over.
  • Serve immediately.

Melon and Prosciutto Salad image

Steps:

  • Using vegetable peeler, over wax paper, scrape curls of Parmesan cheese and set aside.
  • For the dressing, in a small bowl, stir vinegar, salt and pepper, until salt dissolves.
  • Stir oil into vinegar mix and set aside.
  • Cut cantaloupe into thin wedges and cut off rind.
  • Stir dressing again, and reserve 2 tablespoons of dressing.
  • In a large bowl, toss the salad greens with the dressing.
  • Arrange salad mixture on a serving platter.
  • Fan the cantaloupe in a circle over the salad.
  • Top with rolls of proscuitto slices.
  • Add the Parmesan cheese.
  • Drizzle with the remaining dressing.
