DELICIOUS PORK ROAST RECIPE
Yum, this is a perfectly cooked slow cooker pork roast with an Asian flair. While cooking, the onions almost melt down and add much of the flavor. The sauce is thickened at the very end. It's sweet, tangy, and savory. This pork loin will be delicious served over rice or over egg noodles.

- Place sliced onions in a 4-quart slow cooker.
- In a small bowl, combine the salt and pepper; rub over meat. In a large non-stick skillet, heat oil and brown the pork on all sides. Transfer to slow cooker.
- In a small bowl, combine the soy sauce, honey, ginger, garlic, rice vinegar, Hoisin sauce and 1/4 cup hot water; pour over the pork.
- Cover and cook in the slow cooker on low for 4-5 hours or until internal pork temperature reads 160°F.
- Remove the meat and onions from the slow cooker and keep warm.
- In a small bowl, combine the corn starch and 1/4 cup cold water. Slowly stir into slow cooker. Cover and cook on high for 20-30 minutes or until thickened, stirring a couple of times.
- Slice the pork and serve with onions and sauce.
DAD'S BASIC MOIST PORK ROAST
This is the best and most basic way to ensure a juicy, perfectly-cooked pork roast every time. This recipe really requires a good thermometer -- either a $10 instant-read type or, even better, the type that pierces the meat and stays in place while connected to an outside-the-oven monitor. If you can swing that, then try your favorite marinade or rub on this recipe. Use your imagination on the rubs and marinades, but ensure you bring your roast directly from the fridge to the roasting pan -- Dad's recipe works best that way.

- Combine oil, pepper, and salt in a bowl; rub oil mixture over pork and refrigerate while oven preheats.
- Preheat an oven to 475 degrees F (245 degrees C).
- Place a roasting rack in a large roasting pan; arrange pork on the roasting rack.
- Roast in preheated oven until pork with browned, about 30 minutes. Remove pork from oven and reduce oven heat to 325 degrees F (165 degrees C). Allow pork to rest uncovered at room temperature for 30 minutes. An instant-read thermometer inserted into the center should read between 115 degrees F (46 degrees C) and 140 degrees F (60 degrees C).
- Return to oven and continue to cook until pork is slightly pink in the center, 15 to 30 minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).
- Let the roast stand uncovered at room temperature for 15 to 20 minutes before slicing and serving.

This is a delicious pork roast recipe (my favorite kind of roast), beats beef all to heck in my opinion. The potatoes and carrots cooked alongside are wonderful.

Steps:
- The night before,smash garlic with the back of a knife and smoosh in 1 tablespoons of kosher and thyme leaves until you have a paste. Add the mustard and spread mixture over the pork loin. Store overnight in the refrigerator. Allow roast to come to room temperature before cooking.
- Preheat oven to 425 degrees.
- Toss carrots, potatoes, and onion slices in large bowl with the olive oil, melted butter, and salt and pepper to taste. Place vegetables in large roasting pan and roast in oven for 30 minutes.
- Add pork roast to roasting pan and roast for 50 minutes, or until meat thermometer inserted in middle of roast reads 140 degrees. Remove from oven, cover meat with foil and allow to rest for 15 minutes.
- Cut strings from roast and serve on a platter with roasted veggies.
