Bean and Veggie Burgers image

Steps:

  • In food processor bowl with metal blade, combine beans, oats, mushrooms, onion, carrot, bell pepper, garlic, ketchup and salt; process with on/off pulses until coarsely chopped. DO NOT PUREE.
  • Shape mixture into 4 patties, 1/2 inch thick.
  • Spray broiler pan with nonstick cooking spray.
  • Place patties on sprayed pan.
  • Broil 4 to 6 inches from heat for 10 to 12 minutes or until patties are thoroughly heated, turning once.
  • Place lettuce, tomato slices and patties on bottom halves of buns.
  • If desired, top with ketchup or mustard.
  • Cover with top halves of buns.

DELICIOUSLY VERSATILE BEAN BURGERS / VEGGIE BURGER

This is a delicious and easy way to get more beans into your diet. This is an extremely versatile recipe, and you can easily change the taste by simply changing the seasonings. The recipe below is just a guideline for your own creativity, and I tend to adjust the ingredients based on what I have on hand. This is extremely healthy and the low cost can't be beat. Serve plain, in a tortilla, pita, or bun, topped with the sauce (below) tomato, onion, lettuce, etc.

Deliciously Versatile Bean Burgers / Veggie Burger image

Steps:

  • For the patties, chop in a food processor (can be done in a mini processor if doing it in small batches) beans, onion, garlic, and chosen seasonings until beans are coarsely chopped. Stir in egg and enough breadcrumbs or flour to make the mixture workable.
  • In a nonstick pan, spray with non stick spray or add a little oil. Take mixture and form into a patty approximately 1/2 inch thick. Brown on each side over med - med high heat, taking care when flipping (can be delicate).
  • In a small bowl, mix ingredients for sauce.
  • Serve patty drizzled with sauce, in a tortilla, pita, bun or plain. Feel free to top with tomato, onion, lettuce, etc.

  • Once everything is well mixed, take a scoop of the mixture, about the size of a tennis ball, and press into a compact ball. Then roll into the bread crumbs and lightly flatten to adhere the bread crumbs. Take the ball into your hands and flatten as you press in the edge to make a compact flat patty. You may want to lay the patty again in the bread crumbs and keep compressing the edge toward the center to smoothen it as you roll and flatten the patty. Keep doing this until the patty is about 1/2-inch thick. The edge should be smooth with the least cracks possible.
