- Serve these syrupy grapes with cheese for dessert: Grease an ovenproof skillet with 2 tablespoons butter. Add 1 pound seedless grapes and 3/4 cup walnuts; sprinkle with 2 tablespoons sugar. Roast about 25 minutes in a 500 degree F oven. Transfer to a bowl using a slotted spoon. Simmer the juices with 1 tablespoon honey on the stove until syrupy, 6 to 7 minutes. Off the heat, add a squeeze of lemon juice and a pinch of pepper. Pour the syrup over the grapes.
BLISTERED GRAPES WITH HONEY AND RICOTTA

- Heat a large skillet over medium-high heat. Sprinkle the cinnamon, nutmeg and cardamom into the skillet and toast for a few seconds. Add the oil, grapes and salt to the skillet and cook, tossing every few seconds, until the grapes start to blister on all sides, 2 to 3 minutes.
- Divide the ricotta among four bowls. Top each bowl with grapes, a drizzle of honey, almonds and chia seeds.
SPECIAL GRAPES
Absolutely wonderful, refreshing, creamy grape salad. A must try. To serve, I put a scoop in a small dessert cup and sprinkle with brown sugar substitute.

- Beat heavy cream until foamy in a large glass or metal mixing bowl. Gradually add the sweetener, continuing to beat until medium peaks form. Lift your beater or whisk straight up: the tip of the peak formed by the whipped cream should curl over slightly. Beat in the yogurt, cream cheese, and almond and vanilla extracts until well mixed. Fold in the green and red grapes. Cover and refrigerate for 1 hour before serving.

- Wash and drain grapes.
- Cut into clusters of 3, place on paper towels and wait until completely dry.
- Melt chocolate in a double boiler and remove from heat.
- Dip each grape cluster in melted chocolate allowing excess to drip back into pan.
- Roll gently in chopped nuts and place on waxed paper.
- Refrigerate until firm and decorate with mint leaves before serving.
