DEVILED GREEN BEANS

Steps:
- Boil green beans in 2 cups of water for approximately 6 minutes or until beans are just tender.
- Drain beans, reserving 3 Tbsp cooking liquid.
- (This may be done ahead.) Refrigerate until ready to finish.
- About 15 minutes before serving, warm the bacon grease or olive oil in a pan over medium heat.
- Add onion and cook just until softened.
- Whisk together the reserved cooking liquid, mustard, soy sauce and brown sugar.
- Add to the onions and stir.
- Add the beans and stir to coat.
- Cover and simmer on low for 10 to 12 minutes, stirring occasionally.
- Taste and add salt if needed.

DEVILED GREEN BEANS
This is a different way to prepare green beans instead of just plain old beans. We were pleasantly surprised by the taste, and I would serve it with more of a plain type meat like breaded pork chops, or breaded chicken because it has its own distinctive taste. This came from a 1970's cookbook called "Cooking for Two".

Steps:
- Drain liquid from beans into a saucepan.
- Bring to boiling; cook liquid till reduced to about one-third.
- Add beans and heat through; drain.
- Add butter, mustard, Worcestershire sauce, salt and pepper; stir gently till blended.
- Sprinkle with cornflake crumbs.

- Blanch green beans in a large stock pot of well salted boiling water until bright green in color and tender crisp, roughly 2 minutes. Drain and shock in a bowl of ice water to stop from cooking.
- Heat a large heavy skillet over medium heat. Add the oil and the butter. Add the garlic and red pepper flakes and saute until fragrant, about 30 seconds. Add the beans and continue to saute until coated in the butter and heated through, about 5 minutes. Add lemon zest and season with salt and pepper.
GRANDMA'S GREEN BEANS

- Place the bacon in a large cast-iron skillet over medium heat and cook until crisp, 8 to 10 minutes. Remove the bacon and all but 2 to 3 tablespoons of the bacon grease.
- Add the onion and jalapeño and cook for a minute or two, then add the green beans. Cook until the green beans are bright green, an additional minute. Add the chicken stock, garlic powder and a good pinch of both salt and pepper. Bring to a simmer and lightly cover, allowing the some of the steam to escape. Cook until the liquid is evaporated and the beans are starting to soften, but still have a bite, 10 to 12 minutes.
- Transfer the beans to a serving vessel. Crumble the bacon and sprinkle it over the top of the beans, along with the fried onions.
SAUTEED GREEN BEANS WITH ONION
Sauteed green beans with onion - one of my favorite fresh green bean recipes. Also good with bacon or slivered almonds.

- Fill a stockpot with water and bring to a boil over high heat. Add green beans and 1 pinch salt; boil until tender, 5 to 10 minutes. Drain beans in a colander and rinse with cold water. Blot dry using paper towels.
- Heat olive oil in a skillet over medium heat. Cook and stir onion and shallot in the hot oil until tender and translucent, 5 to 7 minutes. Add green beans, garlic salt, soy sauce, salt, and pepper. Cook and stir for 5 to 7 minutes more. Serve immediately.

DEVILED GREEN BEANS
I got this recipe from Sunset Favorite Recipes and have used it for years. Most times I use fresh green beans, but when I'm in a hurry I use canned beans and cook for less time.

Steps:
- Saute onion, garlic, green pepper, and pimientos in butter until onions are limp.
- Remove from heat.
- Stir in mustard, tomato sauce, and cheese.
- Combine beans and sauce; turn into a 1 1/2-quart casserole.
- Bake covered in a 350 oven for 20 minutes; uncover and bake 20 minutes more, or until cheese is melted.

PICKLED GREEN BEANS (DILLY BEANS)
This recipe was originally my Great Grandmother's I just recently found it in my Mother's stuff after she passed away a few months ago.

Steps:
- Clean and Cut beans to fit in tall Mason Jars. (one pint).
- Place ingredients 2-5 into each jar.
- Add beans to jar(s) until full.
- Bring to boil ingredients 6-8.
- Pour boiling liquid over beans.
- Tighten lids.
- Process in boiling water for 5 minutes. *Correction: Processing time should be 10-15 min, not 5.*.
- I use what ever amount of beans I have on hand and make the liquid accordingly.

- Cook green beans as you normally would in a saucepan of boiling water. (usually take about 5 minutes). Drain beans in colander. When drained put beans in a bowl (with a little extra room for mixing).
- In a small bowl (seperate from the one the green beans are in) wisk all ingredients except for the olive oil. When all are mixed well pour olive oil in the bowl wisking continuously until the oil is well blended into the mixture.
- When the sauce is done pour over the beans, then "toss" the beans (salad tongs work the best). Being sure to evenly coat the beans.
