GRANDMA'S BLACKBERRY COBBLER

This is my grandma's recipe, and I have found none that compare. I always make it with blackberries, but you can use any fruit you want.

Grandma's Blackberry Cobbler image

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Whisk 1 1/2 cups sugar, cornstarch, and a pinch of salt together in a small bowl; set aside.
  • In a separate bowl, whisk the flour with 1 1/2 cups sugar, baking powder, and another pinch of salt. Mix in the softened butter until the mixture resembles cornmeal, then stir in the milk until moistened. Spread the blackberries into a 9x13-inch baking dish, and spoon the batter evenly over top. Sprinkle with the cornstarch mixture, then pour the boiling water over top.
  • Bake in the preheated oven until the mixture is bubbly, and the topping is golden brown, 40 to 45 minutes.

SELF CRUSTING BLACKBERRY/DEWBERRY COBBLER

We have so many blackberries/dewberries that grow wild on our land each spring, so my husband always asks for at least one cobbler a season. This is the recipe I use. It is simple and so delicious.

Self Crusting Blackberry/Dewberry Cobbler image

Steps:

  • 1. In a saucepan, heat berries, water, sugar and butter. Add flour to thicken. Simmer on low heat, until desired thickness. Do not scorch.
  • 2. In a large mixing bowl, sift together flour and baking powder. Add sugar and milk. Mix well and pour into 9x13 baking dish that has 2 tablespoons butter or margarine melted in it.
  • 3. Pour berry filling gently over the entire surface, DO NOT STIR.
  • 4. Bake at 350 degrees for about half an hour, until crust on top is golden brown.

BERRY FILLING
1 qt ripe berries
1 c water
1 c sugar
2 Tbsp butter or margarine
2 Tbsp flour (to thicken)
SELF CRUSTING COBBLER
1 c flour
2 tsp baking powder
3/4 c sugar
3/4 c milk

DEWBERRY COBBLER

Dewberries are closely related to the blackberry and the raspberry, and they could be found growing wild where I grew up. We used to eat them in preserves, pies, or just frozen. If you don't know what dewberries are (you don't know what you're missing), you can substitute blackberries, raspberries, loganberries, or boysenberries.

Steps:

  • Preheat oven to 350°F.
  • Grease baking dish with margarine. Place rest of margarine in mixing bowl and add all ingredients except berries.
  • Mix well and pour in 8x8" baking dish.
  • Pour berries on top.
  • Bake 45-60 minutes until dough rises and is golden brown.

I grew up eating this cobbler, which is more cake-like. This recipe came from Mrs. Roach, who was like a grandmother to me. I remember picking dewberries and eating more than I picked. My fingers were always purple and I got my share of thorns, too.

Steps:

  • Mix dewberries with 2 tbls flour and 2 tbls of sugar. Pour mixture into a greased 13x9 pan.
  • Mix together Cobbler ingredients and pour over berries.
  • For Posypka Topping mix all ingredients together until mixture resembles coarse meal. Sprinkle over top of cobbler. Add as little or as much as you like.
  • Bake at 350 for 30-40 minutes.

  • Preheat oven to 350 degrees. Melt stick of butter in oven proof casserole dish in oven while mixing ingredients. Place 1 T margarine on top of berries in a small bowl. Pour 1/2 cup sugar over berries. Stir. Heat in microwave for 1 minute so that sugar begins to melt.
  • Mix together 1 cup flour and 1 cup sugar until blended. Pour in 1 cup milk and mix until blended.
  • After butter is melted, take casserole out of oven and pour batter on top of melted butter. Pour berries on top of batter. DO NOT STIR! Sprinkle a tablespoon of sugar over cobbler. Place in 350 oven and cook for 55 minutes or until golden.
