My college roommate and I first ate these meaty sandwiches at the Iowa State Fair. After a little experimenting, we re-created the recipe. We ate the subs often because they were fast to fix between classes and didn't break our next-to-nothing grocery budget. -Christi Ross, Mill Creek, Oklahoma

Steps:
- Cut bread in half lengthwise; carefully hollow out top and bottom of loaf, leaving a 1-in. shell. Cube removed bread. In a large bowl, beat the eggs, milk, pepper and salt. Add bread cubes and toss to coat; set aside., In a skillet over medium heat, cook sausage and onion until the meat is no longer pink; drain. Add to the bread mixture. Spoon filling into bread shells; sprinkle with cheese. Wrap each in foil. Bake at 400° for 20-25 minutes or until cheese is melted. Cut into serving-size slices.

- In a large skillet, brown sausage links over medium heat. Cut into 1/2-in. slices; place in a 3-qt. slow cooker. Stir in the green pepper, onion, tomato sauce and pepper. , Cover and cook on low for 3-4 hours or until sausage is no longer pink and vegetables are tender. Use a slotted spoon to serve on buns.

ITALIAN SAUSAGE AND PEPPERS SANDWICHES (FAIR DOGS)
You can make this several ways according to the amount of time you have. Sausage is great on the grill and so are the peppers and onions. It can also be made in the slow cooker as well.

Steps:
- 1. In a large skillet, add the olive oil and then the sausage. Brown the sausage on medium heat. Once browned remove in to a bowl. Set aside.
- 2. Add a little olive oil to the skillet and add the onion (after cutting them into rings). Let them fry while you cut up the peppers.
- 3. Cut the peppers into strips (throw away stem and seeds), add to the skillet. Cook on medium heat for about 10-15 minutes, until the onions are soft and the peppers are limp.
- 4. Add the spices, and the stewed tomatoes. Cook on medium for another 10 minutes. Mixing well.
- 5. Add the sausage back to the skillet. Cover and cook on low or simmer for about 20 minute. Serve on hoagie rolls.
- 6. (optional) Put the oven on broil. Cut open the rolls and add all the ingredients, top with a slice of mozzarella cheese. Bake for a couple of minutes (I watch it the entire time, it easily burns), Serve
PAT'S SMOKED SAUSAGE AND PEPPER SANDWICH

- Preheat the oven to 350 degrees F.
- Heat the olive oil in a large cast iron skillet or Dutch oven over medium heat. Add the sausages and brown on all sides, about 7 to 8 minutes. Remove from skillet and reserve.
- Add onions and peppers to the skillet and saute until tender and golden brown, about 6 minutes. Add the garlic and saute until fragrant. Stir in the tomato paste, beer, and BBQ sauce. Cook for a few minutes, then add the sausages back to the pan. Reduce the heat and simmer until the sauce is nice and thick, about 10 minutes.
- Slice the bread open, put on sheet tray, and toast in the oven while the sausage is simmering. Remove the bread from the oven and fill with the sausages and peppers.
- Transfer to serving dishes and serve.
SAUSAGE, PEPPER AND ONION HOAGIES

- Place the sausages in a large nonstick skillet. Pierce the casings with a fork. Add 1-inch water to the pan. Bring liquid to a boil. Cover sausages, reduce heat and simmer 10 minutes.
- Heat a second skillet over medium high heat. Add oil, 2 turns of the pan. Add garlic, onion, cubanelle and red peppers. Season vegetables with salt and pepper.
- Drain sausages and return pan to stove, raising heat back to medium high. Add a drizzle of oil to the skillet, brown and crisp the casings. Remove sausages, slice into 2 inch pieces on an angle and set pieces back into the pan to sear.
- Split and toast the bread under broiler. Melt oil, butter together in small pan over medium heat. Add garlic and let it sizzle 1 or 2 minutes. Brush rolls with garlic butter and sprinkle with a little dried Italian seasoning blend.
- Combine the cooked peppers and onions to the sausages. Add hot peppers and hot pepper juice to the skillet. Toss and turn the sausage, peppers and onions, picking up all the drippings from the pan. Pile the meat and peppers into the garlic sub rolls and serve.
DINOSAUR BBQ'S STATE FAIR SAUSAGE AND PEPPER SANDWICH

- Place 2 skillets on the stove. Put 2 tablespoons of olive oil in one and 1/4 cup olive oil in the other.
- Dump the onions and peppers into the one with less oil and cook over medium-high heat, seasoning with salt and pepper.
- Heat the skillet with the larger amount of oil over medium heat for several minutes.
- Slide the sausages into the pan. Cook for 15 minutes, or til they just lose their pinkness inside.
- Pull the sausages out of the pan and nestle them into the peppers and onions.
- Slice up the rolls and stuff them full with sausages and peppers. Serve hot with lots of napkins!

- Bring the beer to a simmer in a large saucepan over medium-high heat. Add in the 4 bratwurst sausages (brats) and just enough water so that the brats are just covered. Simmer the brats for 5 minutes. Then remove them from the beer. They will be plump and also a little grayish looking - but don't worry! They will get more color once you grill them. Hold the brats aside until it's time to grill.
- While the brats simmer, slice the bell peppers into rings. Do this by laying the pepper on its side, then slicing off the top. Pull out the bundle of seeds and tap the pepper upside down over the sink to get the loose seeds out. With the pepper still on its side, slice it into thin rings - about 1/4 inch thick.
- Have ready a rimmed baking sheet to place on one half of your grill grates, or a sheet of heavy duty foil. Preheat a gas grill, then turn the burners to medium.
- If the sub rolls aren't already cut, slice them open now. Lay some grilled peppers and onions in each roll and then add a grilled sausage to each. Add a few more rings of peppers and onions to the top of each sausage.
