Steps:
- In a large bowl, cream shortening and sugar until light and fluffy. Beat in egg and molasses. Combine the dry ingredients; gradually add to creamed mixture and mix well. Roll into 1-in. balls; roll in additional sugar. , Place 2 in. apart on greased baking sheets. Flatten with a glass dipped in sugar. Bake at 350° for 10 minutes or until set (do not overbake). Remove to wire racks to cool.

YUMMY OATMEAL COOKIES
This is a family favorite--moist and chewy. This is an old recipe ,and the trick to getting a moist cookie, is to take them from the oven when the middle does not look done. This recipe was on a Quaker oats box years ago.

Steps:
- Cream oleo and sugars.
- Add eggs and beat well with the vanilla.
- Mix together the flour, salt, soda, and cinnamon; add to the creamed mixture.
- Stir in the hot water, oats, and raisins; mix well.
- Place heaping tablespoonful batter on a greased cookie sheet (I use an air-bake cookie sheet).
- Bake at 350 degrees until almost done.
- Take out and cool on cookie sheet for 1 minute, then cool on a rack.

Steps:
- Preheat oven to 350°F.
- Mix all ingredients in a large bowl, let stand for 5 minutes so oats absorb moisture.
- Drop dough by tablespoons (should make 36) onto ungreased baking sheets.
- Bake for 15 to 20 minutes.
- Let cool for 1 minute on baking sheets, then transfer to wire racks to cool completely.
- It is possible to substitute margarine spread with oil or clarified butter.
- Feel free to experiment with other extracts. Walnut works well.

- Preheat oven to 350 degrees F (177 degrees C) and line two baking sheets with parchment paper.
- Place the nuts on a baking sheet and bake for 8-10 minutes or until lightly browned and fragrant. Let cool and then chop into pieces.
- In the bowl of your electric mixer (or with a hand mixer), beat the butter and sugar until creamy and smooth (about 2 - 3 minutes). Add the egg and vanilla extract and beat to combine.
- In a separate bowl, whisk together the flour, baking soda, salt, and ground cinnamon. Add the flour mixture to the creamed mixture and beat until incorporated. Stir in the nuts, oats, and dried cranberries or chocolate chips.
- For large cookies, use 1/4 cup of batter (I like to use an ice cream scoop) and space the cookies about 2 inches (5 cm) apart on the baking sheet. Then wet your hand and flatten the cookies slightly with your fingers so they are about 1/2 inch (1.25 cm) thick.
- Bake the cookies for about 12 - 15 minutes or until light golden brown around the edges but still soft and a little wet in the centers.
- Remove from oven and let the cookies cool a few minutes on the baking sheet before transferring them to a wire rack to cool.

- In a large bowl, cream together butter, brown sugar, and white sugar until fluffy. Beat in eggs one at a time, then stir in the vanilla. Combine the flour, baking soda, salt, and cinnamon; stir into the creamed mixture. Mix in oats and nuts until just blended. Drop by heaping teaspoonfuls onto ungreased cookie sheets. Cookies should be at least 2 inches apart.
- Bake for about 12 minutes in the preheated oven. Cool cookies on a wire rack.
