Steps:
- Mix all the ingredients together.
- Store in a tightly closed glass jar.
- To use: Add to the breadmaker with the dry ingredients.
- Use the same amount of enhancer as the yeast (example: 1 tsp yeast, use 1 tsp enhancer).
- The lecithin granules, and the vitamin C powder can be purchased at your health food store, or any pharmacy.
- Note: The ginger boosts the yeast, and makes it act more swiftly.
- The ascorbic acid (vitamin C), strengthens the gluten.
- The lecithin granules aids the oil in causing the strands of gluten to slip against each other more easily.
- These three ingredients together, makes for an all around much better texture bread machine bread.
- ***NOTE*** All the ingredients can be purchased at a health food store.
BASIC WHITE BREAD DOUGH

Steps:
- Sprinkle the yeast into a bowl with half of a cup of water. Stir to dissolve and leave for five minutes. Mix the flour and salt together in another bowl. Make a well in the center of the dry ingredients and pour in the dissolved yeast.
- Form a paste, Cover the bowl with a towel and let the paste sponge (frothy, loose and expanded) for 20 minutes.
- Mix in the rest of the water until you get a firm, moist dough. Knead for about 10 minutes.
- Put the dough in a clean bowl and cover with a dish towel. Let it rise for about 1 1/2 - 2 hours. Punch down then let it rest for 10 minutes.
- Shape into a long loaf. Place onto a floured baking sheet and let it proof for 45 minutes.
- Slash the top and cook in a 425 degree oven for 45 minutes or until golden brown.

DOUGH ENHANCER
I kept reading about dough enhancer but couldn't find it in any of our stores. A dough enhancer is a powder that is supposed to make your dough smoother and is what commercial bakers often use to obtain the smooth textured bread you buy in the store. My bread doesn't last long since we eat it quickly, but it is supposed to help with shelf life as well!

- Mix all together in a bowl and store in refrigherator in an airtight container.
- Use 3 Tbs of this mixture in a recipe for whole wheat bread (3 1/2 cups flour) For white bread use 1 tsp.
- For rye bread use 3 1/2 Tbs.
