SAUSAGE, BEAN & CHEESE PASTIES

Only five ingredients and perfect for freezing ahead, these tasty pasties make a very handy stand-by

Sausage, bean & cheese pasties image

Steps:

  • Prepare the bread mix following pack instructions. While the dough rises, make the filling. Skin the sausages and roll the meat into small meatballs, about 6-8 per sausage. Heat a large deep frying pan and brown the sausages. You may need to do this in batches. Once they're all brown, return them to the pan and pour in the beans. Mix to combine, then allow to cool a little while you roll the dough.
  • Heat oven to 200C/180C fan/gas 6. Grease 2 or 3 large, flat baking sheets. Divide the dough into 12 and roll out each one to a circle, roughly 17cm in diameter - and keep the remaining balls of dough covered with oiled cling film or a damp tea towel.
  • Taking each circle in turn, fill with a scoop of the bean mix and a little of the grated cheese. Fold in half, pressing well to seal. Crimp the edges then transfer to an oiled baking tray. Keep covered with oiled cling film while you make the rest. Brush with a little beaten egg and cook for 15-20 mins until puffed up and golden.
  • Remove and allow to cool slightly on a wire rack. Eat warm or at room temperature. If you would like to freeze the pasties, completely cool and freeze in a single layer on a flat tray covered well. Once frozen, transfer them to a freezer bag and seal well.

Homemade Puff Pastry Recipe with Sausage Rolls image

Steps:

  • Place 1/4 cup butter in a food processor. Add flour; pulse until butter is completely mixed. Add remaining butter and pulse until pea-sized pieces remain. Add water evenly until a loose, ragged dough forms. Place dough between 2 pieces waxed paper and roll out into a rectangle. Cut into 3 strips.
  • Combine pork sausage, 1 egg, bread crumbs, garlic, and onion powder in a bowl. Add filling to the pastry strips; roll pastry closed around the filling. Refrigerate rolls for 30 minutes.
  • Preheat oven to 425 degrees F (220 degrees C).
  • Cut rolls into 1-inch pieces and place seam-side down on a baking sheet. Brush tops with beaten egg.
  • Bake in the preheated oven until golden brown, 15 to 20 minutes.

  • Cut into 2cm chunks and pop into a pan of salted water along with the bay leaf. Bring to the boil and cook until tender to the point of a knife, about 8-10 minutes. Drain and discard the bay leaf. While the potato cooks, remove the skins from the sausages and break each one up into 8-10 pieces.
  • Add them to the pan with the onions and cook for a further 8 minutes. Let both the onions and sausages take on some colour and sticky edges. While the onion and sausages cook, peel and finely chop 1 garlic clove.
  • Add the garlic and 3 tablespoons of water to the onions for the last 2 minutes of their cooking time. Crack the egg into a cup and whisk with a fork. Tip the sausage and onion mix into a big bowl. Add the potatoes and mustard. Gently mix together.
