CHOCOLATE PEANUT BUTTER DREAM BARS

- Preheat oven to 350°. In a large bowl, finely crush 24 of the cookies; stir in melted butter. Press onto the bottom of an ungreased 9-in. square baking pan. Bake until lightly browned, about 10 minutes. Cool completely., In a small bowl, whisk pudding mix and milk until smooth; spread over cooled crust. In another small bowl, beat cream cheese, powdered sugar and peanut butter. Fold in 1 cup whipped topping. Spoon cream cheese mixture over pudding; gently spread to cover pudding. Spread remaining whipped topping over cream cheese layer. Cover and refrigerate for at least 2 hours. , Coarsely crush remaining 8 cookies. Sprinkle crushed cookies and chips over whipped topping before serving.

DREMA'S "PEANUT BUTTER DELIGHT"
Peanut Butter Delight! Of course we love everything peanut butter. This old fashioned recipe was served to us in our school cafeteria's and is now found on almost every counter of every convenient store in the world - BUT none will taste better than your own. The older name aka if "Boiled Cookies" - odd but the same good...

Steps:
- 1. Combine butter in large saucepan and allow to start melting. Combine sugar and cocoa. Mix well. Add to butter above and gradually add in milk.
- 2. Allow to cook on med high heat, stirring. Allow to come to a full boil. Boil 3 minutes. Remove from heat. Add in oatmeal, peanut butter and vanilla. Mix well until peanut butter is melted.
- 3. Lay out sheets of waxed paper. Working quickly Drop or make patties of mixture on wax paper and allow to cool. Store in air tight containers if any left once they cool! Enjoy! You will need another batch and they won't last very long!

Yep - southern-cooked Pinto's with one of our favorites - Peanut Butter! Top of stove or Crock Pot - Both turn out excellent! A little different but really good! I'm a real southerner but not too southern to try a new variety of something...

Steps:
- 1. Place beans in crock pot, cover with water (about 4 inches to cover), add all ingredients minus sugar and peanut butter. Adjust crock pot to cook overnite on Low for 8 hours. If using stovetop method cook beans as in recipe as usual. You will need to replenish water often as necessary and keep heat adjusted to medium.
- 2. During the last hour of cooking (stove top method)add sugar and peanut butter stirring well. Lower heat and continue stove top cooking method for remaining 1 hour.
- 3. ps - Using crockpot to cook beans I add the sugar and peanut butter after they finish cooking and stir well while they are still hot. Enjoy! Another favorite for fried cornbread!
PEANUT BUTTER DREAMS
These are so yummy! These are a peanut butter lovers, dream come true.. I use milk chocolate chips, for the coating.

- 1. Mix butter, sugar, peanut butter and rice krispies together thoroughly. Roll into small balls and dip in chocolate coating (below). Refrigerate for several hours.
- 2. Melt chocolate chips and shortening in a double broiler. Coat the small balls in the chocolate mixture. Line the bottom a cookie sheet with wax paper to set them on. I always refrigerate them on the cookie sheet for 10-15 minutes before I remove them (so the coating sets)and put them into a container to keep in the refrigerator.

A personal favorite of mine. This recipe was shared with me by a co-wowrker, Jean Shapiro at HPU many years ago. Sharing with you folks now! They make great gifts around the holidays as well! Enjoy!

- In top of double boiler melt chocolate with 1/2 cake of parafin wax. Stir ocassionaly.
- Meanwhile in large mixing bowl combine all ingredients. Mix well. Keeping your hands buttered or sprayed start making small round balls. Place in fridge until chocolate is ready!
- Once you are ready have waxed paper prepared and spread out. Dip balls in chocolate and place on wax paper. Allow to thoroughly cool and set up. Tip: You will find the easiest method for you. I have small plastic tongs I use for dipping and use a butter knife to shear off the excess on bottom before placing on paper. Tip: I have made by balls and left in fridge until next day till ready to do the chocolate. Enjoy! Store on wax paper layers in air-tight containers until ready for use.

- 1. 1st LAYER: Melt the brown sugar, syrup, and peanut butter together. Add the Rice Krispies and stir until evenly coated. Press into the bottom of a buttered 9 x 13 baking pan.
- 2. 2nd LAYER: Combine all the ingredients together and beat until thoroughly combined. Spread over the top of the 1st layer. Allow to chill before adding the 3rd layer
- 3. 3rd LAYER: Melt the chocolate chips and peanut butter together and spread on top of the 2nd layer. Keep refrigerated.

- Ground oat flour: Place 1 to 1 1/2 cups oatmeal (quick or old-fashioned) in blender or food processor.
- Blend or process for about 60 seconds.
- Makes about 1 cup oat flour.
- Beat together butter, peanut butter and sugars.
- Blend in eggs and vanilla.
- Add combined dry ingredients: mix well.
- Stir in peanuts.
- Drop by teaspoonfuls onto an ungreased cookie sheet and flatten with a fork dipped in sugar to form a crisscross pattern.
- Bake in a preheated oven (350°) for about 10 minutes or until edges are golden brown.

- Rinse the bag of beans well and remove any that look like they are past their prime. If unsure - chuck it.
