Dressed-Up Black-Eyed Peas image

Steps:

  • Saute onion and celery in oil until tender.
  • In a baking dish, combine cooked onion, cooked celery, bell pepper, peas, tomatoes, ham (or bacon), garlic, and salt/pepper.
  • Bake for 30 minutes at 325 degrees F.

1 1/2 cups chopped onions
1 1/2 cups chopped celery
1 teaspoon cooking oil
1/2 cup chopped bell pepper
3 (16 ounce) cans black-eyed peas
1 (16 ounce) can chopped tomatoes
1/2 cup chopped ham (or 1/2 cup chopped, cooked bacon)
1 minced garlic clove
salt (to taste)
pepper (to taste)

Black-Eyed Pea Dip image

Steps:

  • Place peas in heavy medium saucepan. Add enough water to saucepan to cover peas by 2 inches. Let stand 30 minutes. Drain. Add water to cover peas by 2 inches. Generously salt water. Stir in 1 garlic clove. Boil until peas are very tender, adding more water to pan if necessary, about 1 hour.
  • Using slotted spoon, transfer peas to processor. Process until smooth. Add remaining garlic clove and next 3 ingredients. Pulse until smooth. Season to taste with salt and pepper. Transfer dip to 8-inch-diameter pie plate or quiche dish. (Can be prepared 2 days ahead. Cover and refrigerate.)
  • Preheat oven to 400°F. Top dip with cheddar. Bake until dip is heated through and cheese bubbles, about 20 minutes. Sprinkle dip with green onions and serve with tortilla chips.

May sound a little strange until you try it, but this recipe is addicting! I have made them with low fat mayo, and they were good. I have never tried fat free mayo. This recipe works very well with field peas too. You could easily add to this basic recipe to make all kinds of black eyed pea dishes.

The original recipe used salt pork, but I use bacon. Give me a bowl of these peas, a dash of Tabasco, a slab of hot-from-the-oven cornbread, some green onions and tomato slices then stand out of the way!

Steps:

  • In a 5 quart Dutch oven, cook bacon until crisp; set aside to drain on paper towels.
  • Cook onion, celery and garlic in bacon drippings until tender; add broth, salt, pepper and peas. Bring to a boil and skim top if necessary.
  • Lower heat to simmer; crumble bacon and add to peas.
  • Adjust seasonings to taste, cover and simmer until peas are tender (30 minutes to 1 hour depending on how tender you like them).

  • Heat the oil in a medium-sized casserole dish on the stove top. Add the garlic and onion and cook for a few minutes.
  • Add the peas, tomatoes, mushrooms, carrots, herbs and tamari. Bring to a boil, then lower the heat and simmer for 10-15 minutes. The vegetables should still have a little crunchiness. Add a little water during the cooking process if needed.
