COCKTAIL WIENERS

A sweet and savory treat for any get-together that will sure be a crowd pleaser. It's cheap and easy to make in a slow cooker with only three ingredients. I make this for any get-together and it is always a hit! I was a little unsure at first about the grape jelly concoction, but I tried it and have never done it any other way. It is so savory with just enough sweet. I always receive or over hear lots of agreement with the taste of the sauce. It always disappears at parties, and the next day I have cravings for these cocktail wienies. Try it for your next potluck, back yard BBQ, or any event!

Steps:

  • Stir barbeque sauce and grape jelly together in a slow cooker; add cocktail sausages and stir.
  • Cook on Low for 2 to 3 hours.

Steps:

  • Combine tomatillos, chiles, and water to cover in a saucepan and bring to a boil. Reduce heat and cook, covered 5 to 7 minutes or until tender. Drain and allow to cool.
  • Pulse tomatillo mixture, garlic and next 5 ingredients in a blender or food processor until chopped. Stir in cheese.

6 medium tomatillos, husks removed
3 pasilla chiles, stemmed, seeded and chopped (or 1 large dried ancho chile)
1 garlic clove, minced
1/4 cup beer, flat
1 tablespoon vegetable oil
1/2 tablespoon red wine vinegar (or rice wine)
1/2 teaspoon dried oregano
1/2 teaspoon salt
1 tablespoon feta cheese, finely crumbled (Cotija cheese may be substituted)

DRUNKEN BBQ SAUCE

Great for bbq chicken shrimp, its sweet with a kick. i recommend letting it sit in the marinade for at least 15min before cooking. if using it for shrimp, put a little extra on while cooking on the grill for extra flavor

Steps:

  • 1. mix all ingredients, in order. the worcestershire sauce, garlic, and amount honey can be adjusted for taste (honey is to cut)
  • 2. your finished product should be flavorful, without being overly sweet

1 c ketchup
1/3 c brown sugar
1/4 c captain morgan's spiced rum (or other spiced rum)
1/2 tsp cayenne chilli pepepr
3/4 tsp black pepper (fresh ground)
1 tsp crushed red pepper
1 Tbsp chili powder
1/2 tsp worcestershire sauce
1 clove garlic (small)
1 tsp honey

BBQ Drunken Chicken with White Trash BBQ Sauce image

Steps:

  • 1. Preheat BBQ grill to medium high. Wash the chicken inside and out with cold water and pat dry with paper towels. Rub the chicken inside and out with the dry rub pushing the rub firmly so it adheres. Open the beer can and take a few sips...only a few!!LOL Put the 2 pie plates together. Place the beer can on the pie plate place the chicken over the beer can so the beer can is halfway into the cavity of the chicken.and the chicken is standing upright. Place the chicken on the pie plates on the grill. Close the lid and roast for approx 60 mins or until golden brown basting with the juices and the basting sauce. Basting Sauce: Mix in a small saucepan over medium heat, melt butter and stir in hot sauce and lemon juice. Heat and stir til mixed. To check donesness insert a meat thermometer into the thigh...it should read 160 degrees f. Serve with White Trash BBQ Sauce and the juices from the pie pan.
  • 2. Make the BBQ sauce: Combine all the ingredients in a medium saucepan. Bring the mixture to a boil stirring constantly. Adjust seasoning. Keep warm over low heat. Makes about 3 1/2 cups.

1/4 c dry rub of your choice i used bone dust
1 can(s) beer, any kind, ...16 oz can
1/8 c butter
1/8 c hot sauce
1 Tbsp lemon juice
2 foil pie plates
WHITE TRASH BBQ SAUCE
1 c ranch style dressing
1 c mayonnaise
1/2 c whipping cream
1/2 c milk
2 Tbsp lemon juice
1 Tbsp chopped fresh parsley
1 Tbsp chopped fresh thyme
1 Tbsp coarely ground fresh pepper
1 Tbsp worcestershire sauce
2 tsp hot sauce
1 tsp salt
3 clove garlic, minced

  • Start your smoker and keep the temperature low. We're looking for lots of smoke and the temperature around 190-200 degrees.
  • Season the brisket on all sides with the salt/pepper/garlic mixture (reserve 1/2 tablespoon of the seasoning for later use). Place the brisket on the grill grate, close the lid, and smoke for 3 hours.
  • After the brisket has smoked for 3 hours, remove to a large sheet of plastic wrap. Tightly wrap the brisket with the plastic wrap, then wrap again with foil and place in the refrigerator overnight. This step is important for well penetrated smoke flavor, but if you're cooking same day, just skip the wrapping and go on to the next step.
  • The next day, preheat your grill or a cast iron grill pan to high heat (around 500 degrees). Unwrap the brisket and place it fat side up on the hottest part of your grill. Grill for 8-10 minutes per side, or until the brisket has developed a nice char on both sides.
