EASY HARD-BOILED EGGS
I've tried many different ways to make a great, easy, hard-boiled egg with a soft white and a nice fluffy yolk that's not grey on the outside. After lots of trial and error, I've finally done it. After cooking I usually keep them in the shell until I need them. Enjoy!

Steps:
- Place eggs into a saucepan and fill with water until eggs are just barely covered.
- Bring water to a boil. Boil eggs for 4 1/2 minutes. Remove from heat and let eggs sit in hot water for 20 minutes.
- Transfer eggs to a bowl and either peel and serve, or keep shells on and place in the refrigerator until you are ready to serve.

HARD-BOILED EGGS

Steps:
- Place the eggs in a saucepan and add enough cold water to cover.
- Bring the water to a boil and immediately turn off the heat. Let the eggs sit in the pan for 15 minutes.
- Remove the eggs to a bowl and allow to rest for at least 2 minutes. When the eggs are cool enough to handle, crack the eggs on each side and then roll them back and forth with your hand, breaking up the shell. Remove and discard the shell.

Steps:
- Bring a large pan of water to the boil. Add the eggs and simmer for 10 mins. Drain the eggs and plunge into ice water to cool down, gently peel off the shells and discard.
- Cut some of the eggs in half and decorate with currants for eyes and a small triangle of carrot for a beak to create egg chicks (as per picture). Slice the remaining eggs to create bunny shapes (as per picture) quartering some for ears and halving some lengthways for the body. Create a round tail by slicing the top off one of the eggs.
- Decorate the plate/board with sprigs of rosemary and miniature carrots, if you like. Serve with the cucumber, cherry tomatoes and rocket.

- Remove pan from heat, cover, and let sit for 10 minutes.

- Transfer eggs to ice bath with slotted spoon and let sit 5 minutes.

- The shell should come off in spiral strips attached to thin membrane.
- Hard-boiled eggs can be refrigerated for several days.

After you smack eggs with everyone at the table, the egg gets peeled and eaten. The following are a few hints that will help you cook the best hardboiled eggs: The fresher the egg, the harder it will be to peal it. You should purchase your eggs 2 weeks before you'll be cooking them in order to get them to peal easy. And, the way to get the yolk to be in the center of the egg after it's boiled, is to store them on their side. This relieves the pressure on the membrane within the egg that holds it suspended. The green coloring on the outside of the yolk is caused by cooking them too long. Cooking by the directions below will eliminate that. PERFECT HARD-BOILED EGGS
I believe this to be the perfect recipe for hard-boiled eggs. The eggs peel so easily, most can be peeled in one simple motion. The egg yolk itself is a nice yellow color without the greenish tinge that sometimes occurs when making hard-boiled eggs.
