My husband makes these easy meatballs with simple ingredients like eggs, panko bread crumbs, garlic powder, and fresh basil, and they come out flavorful and delicious every time! Kids love them too! If desired, add the cooked meatballs to your favorite sauce until submerged (this brings out the moistness).

- Preheat the oven to 375 degrees F (190 degrees C).
- Mix eggs, Italian seasoning, basil, salt, pepper, and garlic powder together in a large bowl. Add beef and panko bread crumbs and mix thoroughly.
- Shape mixture into about forty 1 1/2-inch balls, a little smaller than golf balls, using a teaspoon. Place on ungreased, rimmed baking sheets.
- Bake in the preheated oven until no longer pink in the centers, turning halfway through cooking time, 10 to 15 minutes total.

- Preheat an oven to 350 degrees F (175 degrees C). Line two baking sheets with aluminum foil and lightly grease.
- Mix together the ground beef, bread crumbs, cream of mushroom soup, eggs, Parmesan cheese, and onion soup mix. Shape the mixture into balls about the size of a golf ball. Arrange on the prepared baking sheets.

- Stir egg, onion, salt and pepper together in bowl. Add bread crumbs. Stir.
- Add ground beef. Mix. If too soft, add a touch more crumbs. Shape into 1 inch balls. Arrange on broiler pan. Broil for about 10 minutes each side or bake in a 350°F oven for 15 minutes. Turn into ungreased 8 x 8 inch pan.
- SAUCE: Measure barbecue sauce and jam into small bowl. Stir. Spoon over meatballs in pan being sure to get some on every one. Bake, uncovered, for about 30 minutes. Makes 13 meatballs.

EASY BAKED MEATBALLS WITH TWO SAUCE OPTIONS
What an easy recipe, and only 4 ingredients. This was on the cover of the newest issue of Kraft's "What's Cooking" magazine. I did add minced garlic and some Italian seasoning....just couldn't help myself :) I baked the meatballs on a rack to eliminate excess fat. Two sauce options were given as serving suggestions. I have listed them in the instructions so that they will not interfere with the nutritional values of the meatballs. These are terrific for freezing, making future meals even faster.

- Preheat oven to 400*F. Line 2 large pans with foil. Spray pan and rack (if using) with cooking oil.
- Mix together all ingredients, and form into 32, 1-1/2" balls.
- Place meatballs on the pan (or rack if using) and bake for 16 - 18 minutes, or until done. (160*).
- Tomato-Basil Cream Sauce:.
- Mix 1-1/2 cups pasta sauce, 1/4 cup light cream cheese spread, and 2 tbsp chopped fresh basil in a large skillet. Cook on medium-low heat for 3 minutes or until heated through, stirring occasionally. Add 16 hot meatballs and stirr to evenly coat. Sprinkle with 1/4 cup grated Parmesan cheese before serving.
- Creamy Brown Gravy:.
- Mix 1 cup beef gravy, 1/4 cup light cream cheese spread and 2 tbsp chopped fresh parsley in a large skillet. Continue with the directions as given for the tomato basil sauce, omitting the Parmesan.
BEST EASY MEATBALLS

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.

- For the sauce - mix the cornstarch with ¼ cup water in a small bowl. Set aside.
- Add all of the remaining sauce ingredients to a small saucepan and stir over a medium heat for approximately one minute.
- Add the cornstarch mixture and stir to combine.
- Continue stirring until the mixture becomes thick and glossy- about 5 minutes. Set the sauce aside to cool.
- For the meatballs - Preheat oven to 350°F (175°C ).
- Use a food processor to make fresh breadcrumbs ( I used 4 slices of bread with crusts removed).
- Add all meatball ingredients to a medium sized mixing bowl and thoroughly mix together.
- Roll into small meatballs with your hands, using about a tablespoon of mix at a time.
- Place meatballs in a 9 x 13 baking dish and, if using as a main meal, add the optional cup of pineapple chunks if desired - Just spread them evenly around the meatballs.
- Pour the sweet and sour sauce over the meatballs , ensuring that they are all covered.
- Bake for 30 minutes and stir. Continue to bake for another 15 minutes and stir again. Check for doneness and bake longer if needed.
- Serve over rice or noodles for a main meal. Lightly sprinkle each meal with toasted sesame seeds or finely sliced green onions for presentation if desired.
- Can be served as cocktail meatballs in a single large bowl with cocktail forks or toothpicks.
