WHITE BEAN AND SMOKED BACON DIP
Steps:
- Render the bacon in a small pan over medium-low heat, stirring regularly to prevent burning. Drain on paper towels, reserving the fat.
- Add the bacon, white beans, vinegar, shallots, nutmeg, anchovies, lemon zest and juice and garlic to a food processor and pulse until mostly smooth. Season with salt and pepper. With the processor running, drizzle in the olive oil and about 1 tablespoon of the reserved bacon fat to emulsify.
- Transfer the mixture to a serving bowl and fold in the parsley.

CROCK POT TURKEY, BEAN & BACON DIP
This makes a wonderfully easy appetizer that is great to serve with tortilla chips, hearty crackers, breadsticks or whatever you like! The bacon can be easily cooked in a microwave oven before adding to the crock pot. I usually just place the bacon strips without overlapping on a paper towel on a plate. I usually cook it for 1 minute per slice but it depends on your microwave and the thickness of the bacon. It's easier to cool the bacon before crumbling it so you don't burn yourself. The jalapeno is optional depending on if you like it spicy. I used a 5-quart crock pot for this recipe. Enjoy!

- In a medium mixing bowl, combine refried beans, water and taco seasoning. Stir mixture until well combine. Spread bean mixture evenly into the bottom of a small casserole dish (I used a 1 1/2 quart 8x6 dish). Sprinkle beans evenly with both grated cheeses.
- Peel and mash avocados with a fork, blend in lime juice, onion powder and garlic powder. Spread guacamole mixture evenly over cheese in casserole dish. Dollop sour cream over guacamole and spread evenly (if you want to do it the way I did in the photos, spread 1/4 cup sour cream over guacamole then reserve 1/4 cup. Drizzle the remaining 1/4 cup over completed dip using a snipped ziploc bag). Sprinkle bacon next, followed by tomatoes and olives. Garnish lastly with green onions and chopped cilantro. Season with fresh ground pepper over top to taste. Serve with tortilla chips and store dip covered, in the refrigerator.
