You can look at this as chocolate mousse stiffened by caramel or as a perfect caramel enriched by chocolate. Either way it is so rich, thick, gooey and creamy, so childish in a way, that it almost requires something completely sophisticated to offset it. Orange confit perhaps. Of course it can be eaten by itself, too.

- Put sugar in a heavy pan, and turn heat to medium. When sugar warms and begins to liquefy, add 1/2 cup water. Cook, stirring occasionally with a wooden spoon, until mixture bubbles, then becomes foamy, then dry again. Keep cooking until it liquefies again, stirring often and breaking up any chunks that form. When it is all dissolved and brown, remove from heat, and stir in butter a bit at a time. Standing back to avoid spattering, add 1 cup cream, then stir until blended. Let sit until cool enough to touch.
- Meanwhile beat remaining cream until it holds soft peaks; refrigerate. Melt chocolate over very low heat or in a double boiler or microwave.
- Mix melted chocolate into caramel. Add 1/3 of the whipped cream to caramel, and stir to combine. Add remaining whipped cream and gently fold, just until combined. Pour into a bowl and refrigerate until set, about 4 hours.
- Scoop mousse with a spoon dipped in a hot water. Serve alongside a piece of orange confit.

- 1 Sprinkle the gelatin on the liqueur in a small bowl and set aside.
- 2 Combine the milk and 1/4 cup of the sugar in a small saucepan and whisk to mix. Place over medium heat and bring to a simmer.
- 3 Meanwhile, whisk the eggs in a small bowl. When the milk boils, whisk about a third of the milk into the eggs. Return the remaining milk to a boil over low heat then whisk in the egg mixture. Continue whisking until the mixture thickens slightly. Don't let it boil or the eggs will scramble. Remove from the heat and quickly whisk in the gelatin mixture.
- 4 Whisk in the chocolate and continue whisking until the chocolate is melted and the mixture is smooth. Scrape it into a medium bowl and cool it to room temperature.
- 5 To make the meringue, half-fill a medium saucepan with water and bring it to a boil over medium heat. Regulate the heat so that the water simmers gently but isn't boiling violently. Combine the egg whites, salt, and the remaining 1/2 cup sugar in the heatproof bowl of an electric mixer, whisking by hand just to mix. Place the bowl over the pan of water and whisk gently until the egg whites are hot (140 degrees on an instant-read thermometer) and the sugar is dissolved. Place the bowl on the mixer with the whisk attachment and whip on medium speed until the meringue is cooled (it doesn't have to come all the way down to room temperature) and increased in volume.
- 6 Fold the meringue into the chocolate mixture.
- 7 Divide the mousse among the prepared glasses and refrigerate until set, 3 to 4 hours.

- Melt the chocolate in the top of a double boiler, stirring constantly until there are no lumps.
- Add 150ml of the cream and stir to combine.
- Put to one side until the mixture is cool (I have even cheated if I am in a hurry& put this in the fridge/freezer, but just watch it doesn't freeze otherwise it will be ruined).
- When cool, whip the remaining cream in a bowl.
- Spoon the chocolate mixture into the whipped cream, and fold until well combined.
- Cover with plastic wrap and leave in the fridge until set.
- You can also pour this into individual ramekins if you are having a dinner party, and then garnish with chocolate shavings before serving.
- This is really quite rich so a little goes a long way.
- You can also use mint chocolate (with a flowing centre) but the caramello tastes much better.

- In a 3-4 qt saucepan over low heat, stir sugar and water until it looks clear.
- Increase heat to high and boil without stirring until dark golden brown (about 10 minutes).
- Occasionally brush sugar crystals down sides of pan with a wet pastry brush.
