Steps:
- Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and lay lasagna flat on foil to cool.
- In a medium bowl, combine ricotta, Parmesan, eggs, salt and pepper; mix well.
- In a medium saucepan, heat oil over medium heat and saute garlic for 2 minutes; stir in spaghetti sauce and Italian seasoning. Heat sauce until warmed through, stirring occasionally, 2 to 5 minutes.
- Spread 1/2 cup of sauce in the bottom of a 9x13 baking dish. Cover with a layer of noodles. Spread half the ricotta mixture over noodles; top with another noodle layer. Pour 1 1/2 cups of sauce over noodles, and spread the remaining ricotta over the sauce. Top with remaining noodles and sauce and sprinkle mozzarella over all. Cover with greased foil.
- Bake 45 minutes, or until cheese is bubbly and top is golden.

- Preheat oven to 375 degrees F (190 degrees C).
- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- In a blender or with an electric mixer, blend tomato sauce and cottage cheese together until smooth. Spoon a little of the sauce mixture in the bottom of a 9x13 baking dish. Place a layer of cooked noodles over the sauce, and sprinkle a portion of the mozzarella, the cheddar and the parmesan over the noodles. Repeat layering of sauce, noodles and cheese; finish with a cheese layer.

EASY CHEESY LASAGNA(NO BOIL)
A no boil lasagna that uses regular lasagna noodles. Easy to assemble, but allow enough time to cook. Family favorite for decades, especially the Florentine version. - Heat oven to 375°.
- Use a 9x13 GLASS pan.
- Brown ground beef or sausage with onion and garlic.
- Drain off fat.
- Return beef mixture to skillet.
- Stir in spaghetti sauce and water.
- In a small bowl, combine ricotta, Parmesan and parsley; set aside.
- In 13x9" glass pan, layer 1/3 of sauce.
- Layer half of uncooked lasagna noodles. (I often stagger the noodles from end to end as well as overlap them a bit. Centering the noodles in the middle instead of to one end.).
- Layer one half of ricotta mixture and half of mozzarella.
- Cover with 1/3 sauce.
- Repeat layers, ending with sauce mixture.
- Cover tightly with foil.
- Bake 1 hour,.
- Uncover, sprinkle with extra parmesan . Let stand 10 minutes before serving.
- For Florentine, omit meat and parsley. Stir onion, garlic and one 10 oz. package frozen chopped spinach that has been thawed and drained and 1/8 teaspoons nutmeg into cheese mixture. Layer as above. I often use steamed, chopped fresh spinach.
- Microwave directions: ( I have never used these) Prepare as above except use plastic wrap and vent corner. Microwave on high for 10 minute or until sauce boils. Microwave at 50% power for 30-35 minute or until pasta is tender, rotating dish after 15 minute Uncover: top with parmesan cheese. Let stand 10 minute before serving. These directions were for older microwaves, so be careful with the times.

SUPER CHEESY HOMETOWN LASAGNA

- For the meat sauce: In a stockpot or Dutch oven, combine the beef (do not brown first), tomato sauce, tomato paste, chili powder, sugar, salt, pepper, garlic salt, bay leaves and onion. Add 2 cups water. Mix until combined. Cover and simmer over medium-low heat for 1 1/2 to 2 hours, stirring occasionally. Stir in the vinegar and simmer for another 30 minutes.
- For the lasagna: Preheat the oven to 375 degrees F. Spray a 9-by-13-inch baking dish with nonstick cooking spray and place the dish on a rimmed baking sheet.
- In a medium bowl combine the ricotta, basil, parsley, garlic salt, red pepper flakes, if using, and egg and stir until well blended.
- Spread 2 cups meat sauce across the bottom of the prepared baking dish. Place 4 noodles over the sauce-it is okay if they overlap slightly. Dollop 2/3 cup of the ricotta mixture on the noodles, then spread it in an even layer. Top the ricotta with 4 slices ham, then 4 slices provolone. Sprinkle 1 cup mozzarella over the provolone. Repeat the layering-sauce, noodles, ricotta, ham, provolone, mozzarella-twice more. Top with another layer of noodles, then the Parmesan and the remaining mozzarella.
- Cover the baking dish tightly with foil. Bake until the dish is bubbling and the noodles are cooked (you can test by poking with a sharp knife to make sure the noodles are soft), about 50 minutes. Remove the foil and return to the oven until the cheese is bubbling and golden brown, another 10 to 15 minutes. Let the lasagna rest for 10 minutes, then serve warm.

- Preheat the oven to 350ºF (180ºC). Grease a 9 x 13-inch (22 x 33 cm) baking dish lightly with nonstick spray.
- In a large bowl, mix together the ground beef and marinara sauce.
- In a separate large bowl, combine the ricotta, Parmesan, parsley, basil, salt, pepper, and olive oil.
- Spread 1 cup of the meat sauce over the bottom of the prepared baking dish. Top with 5 cooked lasagna noodles, overlapping as needed to completely cover the sauce. Spread 2 cups of the ricotta mixture over the noodles. Top with 1 cup of mozzarella cheese. Repeat with the remaining meat sauce, noodles, ricotta, and mozzarella to make 2 more layers.
- Bake the lasagna for 25-30 minutes, until the cheese is melted and the sauce is bubbling up through the layers. Turn the broiler to high and broil for 1-2 minutes, until the top layer of cheese is bubbly and golden brown.
- Let the lasagna cool for 30-45 minutes, then serve.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large skillet, cook and stir ground beef until brown. Add mushrooms and onions; saute until onions are transparent. Stir in pasta sauce, and heat through.
- In a medium size bowl, combine cottage cheese, ricotta cheese, grated Parmesan cheese, and eggs.
- Spread a thin layer of the meat sauce in the bottom of a 13x9 inch pan. Layer with uncooked lasagna noodles, cheese mixture, mozzarella cheese, and meat sauce. Continue layering until all ingredients are used, reserving 1/2 cup mozzarella. Cover pan with aluminum foil.

- Preheat oven to 350 degrees.
- Brown ground beef in large skillet, then drain. Season meat with chili powder, salt and pepper, garlic powder and red pepper. Season to taste measurements are approximate.
- Add can of stewed tomatoes, with juice, to meat and stir until well blended. Add beans, corn, onion, and sour cream to meat and tomatoes.
- In a 9x9 pan place four small torillas. Spoon half of meat mixture on the tortillas, spinkle with cheese. Layer 4 more tortillas, the rest of the meat and another layer of cheese. Finish with four torillas and a covering of cheese.
- Bake at 350 until tortilla on top crisp and cheese bubbles, about 10-15 minutes. Serve with sour cream on top.

- In a large skillet over medium heat brown the ground beef. Drain the grease. Add spaghetti sauce and simmer for 5 minutes.
- In a large bowl, mix together the cottage cheese, 2 cups of the mozzarella cheese, eggs, half of the grated Parmesan cheese, dried parsley, salt and ground black pepper.
- To assemble, in the bottom of a 9x13 inch baking dish evenly spread 3/4 cup of the sauce mixture. Cover with 3 uncooked lasagna noodles, 1 3/4 cup of the cheese mixture, and 1/4 cup sauce. Repeat layers once more: top with 3 noodles, remaining sauce, remaining mozzarella and Parmesan cheese. Add 1/2 cup water to the edges of the pan. Cover with aluminum foil.
- Bake in a preheated 350 degree F(175 degrees C) oven for 45 minutes. Uncover and bake an additional 10 minutes. Let stand 10 minutes before serving.

- In a dutch oven or very large skillet, brown the meat. Add the onion powder and garlic and cook a couple of minutes more.
- Stir in the tomato sauce, paste, water and seasonings.
- Cover, and simmer, stirring occasionally for 30 minutes.
- With mixer or food processor, mix the cream cheese, ricotta and eggs.
- Preheat oven to 350, and spray a large lasagna pan (11x15) with cooking spray.
- Layer half the noodles in the bottom of the pan, breaking the noodles as needed.
- Add half of the meat sauce, and spread evenly over the noodles.
- Gently spread the cream cheese/ricotta mixture evenly over the sauce.
- Lay the sliced Mozzarella on top of the cream cheese layer, covering completely.
- Lay the remaining lasagna noodles on top of this.
- Top with remaining meat sauce.
- Sprinkle the Parmesan over the entire casserole.
- Bake for 25 minutes. Cool 15 minutes before cutting.
- NOTE: You could divide this into two smaller casseroles and freeze one.

- Preheat oven to 375°.
- In a sauce pan, heat oil to medium high heat. Add garlic and onions, and reduce the heat to medium low to sweat until translucent.
- Return pan to medium high heat. Brown beef and sausage. Drain and return to skillet.
- Stir in marinara sauce and water. Remove meat mixture from heat.
- In a small bowl, combine ricotta, parmesan and basil.
- In 9x13-inch baking dish, layer one-third of the meat mixture, half of the uncooked lasagna pieces, half the ricotta mixture, and half the mozzarella cheese. Repeat layers once, ending with meat mixture.
- Cover tightly with foil. Bake 1 hour and 30 minutes.
- Uncover. Sprinkle with additional parmesan cheese, if desired.
- Let stand 10+ minutes before serving.
CLASSIC CHEESY LASAGNA
This is very good and easy to make. It comes from my 1981 cookbook "Favorite Brand Name Recipes". I have been making this for years. It is a favorite of my family. Please note that I alter some of the ingredients to my taste. I usually add more parsley, oregano, garlic powder, so alter to your taste. Enjoy!

- In large heavy pan, lightly brown beef and onion in oil.
- Add tomatoes (put through blender or cut with edge of spoon), tomato paste, water, parsley, salt, sugar, garlic powder, pepper, and oregano.

- Meanwhile cook lasagna as directed on package.
- Drain lasagna.
