- In a medium-size mixing bowl, whisk together the half-and-half, eggs, honey, and salt. You may do this the night before, just be sure to refrigerate the mixture overnight. When ready to cook, pour custard mixture into a pie pan and set aside.
- Heat oven to 375ºF. Dip bread into custard mixture, allow to soak for 30 seconds on each side, and then remove to a wire rack set inside a half sheet pan, and allow to sit for 1 to 2 minutes. Meanwhile, line a second half sheet pan with a wire rack and set aside. If using Frosted Flakes, coat the soaked and rested bread before cooking.
- Over medium-low heat, melt 1 tablespoon of butter in a 10-inch saute pan. Place 2 slices of bread at a time into the pan and cook until golden brown, 1 to 2 minutes per side. Remove from pan and place on a rack-lined half sheet pan in oven for 5 minutes. Repeat with all 8 slices. Serve immediately with maple syrup, whipped cream, or fruit.

- Whisk eggs, cinnamon, vanilla and salt in a shallow casserole dish until fully combined. Whisk in milk.
- Using one slice at a time, allow bread to soak in egg mixture for 10-30 seconds per side (see notes below for tips on soaking time!). Do not pre-soak, soaked slices need to cook immediately! (This yields French toast with custard-like, soft centers; for crisper French toast, quickly turn bread in egg mixture just 2-3 times).
- To cook, melt 1 teaspoon of butter per toast over medium heat in a large skillet or on a griddle. Cook French toast until golden on either side and puffy/cooked through, about 3-4 minutes per side. Do not overcrowd pan, cook 2-4 toasts at a time, depending on size. Repeat until all of the bread has been used.

- Choose your bread. If you like very thick french toast (you should try it at least once!), find a local bakery and get yourself a loaf of challah or brioche bread (buy a day-old loaf if they have it.) I don't like using French bread or the regular loaves you find in the deli at the grocery store; the crusts turn out too chewy.
- You want a nice soft edge. If you can't get to a bakery, head to the grocery store and buy the thickest and softest white bread you can find. (3/4 inch or thicker.) Texas toast is great.

- BATTER: To a shallow bowl or baking dish add cornstarch, then slowly add in dairy-free milk while whisking. Whisk fully to ensure there are no clumps. Then add maple syrup, vanilla extract, black salt (or sea salt), cinnamon, ripe mashed banana (adds custardy texture and subtle sweetness — leave out if you dislike banana), and turmeric (optional — for color). Whisk again to combine.
- DIP: In the meantime, add your bread slices to the batter and soak on each side for ~15-20 seconds. It shouldn’t be super soggy, but they should be well coated. Option to dust each side with a bit more cinnamon.
