  • In a blender or food processor, finely mince the garlic and scallions. Add the remaining ingredients, except the bread and paprika and blend until smooth. Taste and adjust the seasonings. Refrigerate for up to 2 days. Just before serving, make a bread bowl: Cut about an inch off the top of the round of bread and save it for a lid. Remove the bread from the center, hollowing out the loaf. Stir the dip well and place in the bread bowl. Sprinkle lightly with paprika. Serve the removed bread chunks along with crudites for dipping.

This recipe doesn't contain mayo or sour cream like most, so it's very cheesy and very delicious. I'm asked for the recipe every time I make it. For those who don't want a strong cheese like Cheddar, you can replace it with anything you like or even leave it out altogether. I like adding the Cheddar because it adds color and a little more flavor.

Creamy Cheesy Spinach Dip image

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Grease a 1 1/2-quart shallow baking dish with 1 teaspoon olive oil.
  • Heat 2 teaspoons olive oil in a large pot over medium heat. Cook and stir onion and garlic in hot oil until lightly browned, 4 to 7 minutes. Add spinach and simmer until spinach is hot, about 5 minutes. Drain any liquid from the mixture and transfer to a bowl.
  • Pour milk into pot and return pot to medium heat. Melt cream cheese into the milk; cook and stir together about 3 minutes. Return spinach mixture to pot with 1/2 cup mozzarella cheese and Cheddar cheese; stir to combine. Season the mixture with Worcestershire sauce, salt, and pepper. I got this recipe from my sister-in-law, not sure where she got it from. It's very easy to throw together. It not too rich like other spinach dips. I made the mistake once of using fat free sour cream and it made the dip very loose & watery so I don't recommend it. You can serve this with french bread, hawaiian bread, and/or veggies. Oh, and make sure you use the Knorr brand vegetable recipe mix. I use another brand once and it ruined my batch of dip so I had to toss it out. I recommend chilling at least 20 minutes in order to rehydrate the veggies in the soup mix, otherwise, you'll have a crunchy dip until they do rehydrate. My SIL serves it right away so it's up to you. I had to guess at the servings and the yield size so the nutritional stats are probably off, sorry.

This is one of the first recipes I ever created, so it's only appropriate that it should be the first one I post! It's a great cold treat, and very easy to make! Most other recipes I've seen call for mayo or Miracle Whip instead of the cream cheese. I'm not a big fan of "heart-healthy" recipes, but this could easily be made with low/no-fat sour cream and cream cheese. The water chestnuts are optional, but I think it adds to the texture!

  • If using onions, I lightly saute them in a little butter or olive oil to soften.
