FRESH STRAWBERRY SAUCE
This is an excellent sauce for pies and cakes - especially cheesecakes!

Steps:
- Combine strawberries, sugar, 2 tablespoons water, and balsamic vinegar in a saucepan and bring to simmer over medium heat.
- Reduce heat to medium-low, cover, and simmer for 15 minutes.
- Whisk 2 tablespoons water and cornstarch in a small bowl.
- Whisk cornstarch mixture into strawberry mixture. Cook, stirring constantly, until mixture thickens, 1 to 2 minutes. Remove from heat.
- Transfer mixture to a blender and puree until smooth.

- Place the strawberries in a large bowl. Sprinkle the sugar evenly over the berries, and stir to evenly coat all of the fruit. Let stand at room temperature for 10 minutes, stirring occasionally. Cover and chill until ready to serve.

- Combine the strawberries, sugar, lemon juice and 2 tablespoons water in a saucepan. Cook over medium heat, stirring occasionally, until the berries break down, about 10 minutes. Remove from the heat; stir in the vanilla.
- Strain through a fine-mesh sieve into a bowl, pressing against the solids; let cool completely. To store, cover and refrigerate up to 4 days.
EASY STRAWBERRY SAUCE
One bag (20 ounces) frozen strawberries can be substituted for fresh. However, they make a slightly less vibrant sauce.

- Wash, stem, and hull the strawberries. Cut in half, and quarter if large. In a small saucepan, combine berries and jam. Cook over medium-high heat, stirring occasionally, until the berries have softened and the mixture becomes a sauce, about 5 minutes. Cool sauce before serving or, store in an airtight container in the refrigerator up to 1 week.

- Combine the strawberries and sugar in a small bowl; cover and refrigerate for 2-3 hours. Drain, reserving juice. Set berries aside. Add water to juice to measure 1/2 cup; pour into a saucepan. Stir in cornstarch until smooth. Bring to a boil; boil and stir for 2 minutes. Remove from the heat; stir in extract. Pour over berries; fold gently. Chill. Serve over ice cream or cake.

- Stir together berries, sugar, salt, and lemon juice in a saucepan. Bring to a boil, mashing with a potato masher and stirring frequently. Cook at a low boil, stirring more frequently as mixture thickens, until sauce clings to a spoon, about 10 minutes. Skim foam from top. Let cool completely.
MOM'S SIMPLE & SWEET STRAWBERRY SAUCE
This is a sweet, chunky strawberry sauce that my mom would make when we had strawberries. She would put it on ice cream and pancakes. It tastes really good and is very simple. It's good on ice Cream, cakes, waffles, pancakes, and even just plain right off the stove! I think it tastes nicer warm than cold :)

- Place strawberries, lemon juice and honey in a small pot and bring to a boil over medium heat, stirring occasionally.
- Reduce heat to medium low to maintain a constant simmer, and cook for 10 minutes, stirring occasionally.
- Turn off the heat and let the sauce sit for a minute. Transfer to a blender or to a blender cup for use with a hand blender. (I don’t recommend using a hand blender in your pan for this sauce; it can cause splatters.)
- Blend until smooth (or leave slightly chunky if you prefer). Cool completely then store in a covered container in the refrigerator until ready to use. The sauce will keep in the refrigerator for up to 10 days. You can also freeze it for up to 6 months.
