Steps:

  • Combine strawberries, sugar, 2 tablespoons water, and balsamic vinegar in a saucepan and bring to simmer over medium heat.
  • Reduce heat to medium-low, cover, and simmer for 15 minutes.
  • Whisk 2 tablespoons water and cornstarch in a small bowl.
  • Whisk cornstarch mixture into strawberry mixture. Cook, stirring constantly, until mixture thickens, 1 to 2 minutes. Remove from heat.
  • Transfer mixture to a blender and puree until smooth.

  • Wash, stem, and hull the strawberries. Cut in half, and quarter if large. In a small saucepan, combine berries and jam. Cook over medium-high heat, stirring occasionally, until the berries have softened and the mixture becomes a sauce, about 5 minutes. Cool sauce before serving or, store in an airtight container in the refrigerator up to 1 week.

2 pints (about 1 pound) fresh strawberries
1/2 cup seedless raspberry jam

Steps:

  • Combine the strawberries and sugar in a small bowl; cover and refrigerate for 2-3 hours. Drain, reserving juice. Set berries aside. Add water to juice to measure 1/2 cup; pour into a saucepan. Stir in cornstarch until smooth. Bring to a boil; boil and stir for 2 minutes. Remove from the heat; stir in extract. Pour over berries; fold gently. Chill. Serve over ice cream or cake.

  • Stir together berries, sugar, salt, and lemon juice in a saucepan. Bring to a boil, mashing with a potato masher and stirring frequently. Cook at a low boil, stirring more frequently as mixture thickens, until sauce clings to a spoon, about 10 minutes. Skim foam from top. Let cool completely.

  • Blend until smooth (or leave slightly chunky if you prefer). Cool completely then store in a covered container in the refrigerator until ready to use. The sauce will keep in the refrigerator for up to 10 days. You can also freeze it for up to 6 months.
