EASY THAI SATAY APPY (BEEF OR CHICKEN)
I find that RZ has made me much more aware of simple recipe opportunities, esp those found right on the cans of products. I guess you expect them to be so commonly used that you discount them at once. Here is the easiest recipe I have ever seen for satay (beef or chicken). All you really have to do is open a can. I love an easy prep, so this caught my eye. (Time does not include time for skewers to soak or satays to marinate)

Steps:
- Soak bamboo skewers in water for 2 hours.
- Pierce meat strips onto bamboo skewers. Combine turmeric powder w/350 ml of the coconut milk & marinate for at least 60 min (or longer for more flavor).
- Grill satays & use the remaining 50 ml of coconut milk & turmeric mixture to baste during grilling. Serve w/heated satay sauce.
- NOTE: I've entered this recipe as an appy w/1 skewer per person. As an entree to serve 2 persons, I'd increase the amt of meat to get 10 skewers to marinate & keep all other ingredients the same.

EASY CHICKEN SATAY

- Stir together 1/2 cup coconut milk, garlic, 1 teaspoon curry powder, brown sugar, salt, and pepper until the sugar has dissolved. Toss marinade with the chicken, cover, and marinate for at least 2 hours.
- Bring 1 cup coconut milk, 1 tablespoon curry powder, peanut butter, chicken stock, and 1/4 cup brown sugar to a simmer in a saucepan over medium-high heat. Simmer for 5 minutes, stirring constantly, until smooth and thickened. Remove from heat and stir in lime juice and soy sauce; season to taste with salt.
- Preheat a grill for medium-high heat.
- Thread marinated chicken onto skewers, then grill 4 to 5 minutes per side, or until cooked through. Serve with warm peanut sauce.

SATAY CHICKEN
Tender chicken on bamboo skewers with a peanut sauce dip makes for an attractive and excellent tasting starter. This Recipe works equally well with pork or beef.

Steps:
- Also need 24 8 inch Bamboo Skewers.
- Cut the chicken breast into 1/4 inch chunks (3 for each skewer).
- Chop the coriander root, kaffir lime leaves and the lemongrass.
- Marinade the chicken with all the ingredients for at least one hour.
- Thread meat onto bamboo skewers.
- Satay will taste best when cooked over charcoal grill.
- During cooking, use a small basting brush with coconut milk, turn stick several times until meat looks brown and cooked through.
- Serve hot with peanut sauce.

CHICKEN (OR BEEF) SATAY
You can make this with chicken or beef. I got this from "1000 Classic Recipes for Every Cook".

Steps:
- Using a sharp knife, trim any fat from chicken, then cut into 3" strips.
- For marinade, place onion, garlic, ginger, soy, shili powder, coriander, brown sugar lemon juice and vegetable oil in a zip top bag and mix well. Add chicken strips and mix in marinade until well coated. Put in refrigerator for 2 hours and up to overnight.
- Remove meat from marinade and thread the strips accordion style onto pre-soaked wooden skewers.
- Broil the skewers for 8-10 minutes, turning and brushing occasionally with the marinade until cooked through.
- Meanwhile, make sauce.
- Mix coconut milk with peanut butter, fish sauce, and lemon juice in saucepan. Bring to a boil and cook for 3 minutes.
- Season to taste with salt and pepper.
- Transfer sauce to serving bowl and serve with cooked satays.

BEEF OR CHICKEN SATAY WITH PEANUT SAUCE
Thai style chicken or beef kabobs. These are very flavorful when marinated overnight. The recipe listed is for a large group. Perfect for potlucks. (Prep time is marinade time).

- Method for meat and marinade: Trim the meat and cut into long thin strips.
- Combine all of the marinade ingredients, add the meat, and let marinate under refrigeration for at least 2 hours and up to 12 hours.
- Soak bamboo skewers in water for a least 10 minutes before you are ready to grill the satays.
- Thread the meat on the skewers, one strip per skewer.
- Skewer meat can be returned to the marinade to hold until cooking time.
- Place the skewered meat on the grill or boiler rods.
- Grill or broil undisturbed for about 1 minute, turn and grill 1 minute more for medium rare, or as needed for the desired doneness.
- Server the satays with the spicy peanut sauce.
- Method for Spicy Peanut Sauce: Process all ingredients in food processor until smooth.
- Cover and set aside at room temperature for 1 hour or overnight in the refrigerator.
- Bring to room temperature before using, and stir briskly or reprocess to mix.
THAI BEEF SATAY
An interesting twist to plain old shish kabobs with beef and vegetable pieces... I was trying for something just a little bit exotic. I'm not one for eating really spicy foods, (even black pepper is a big step for me!) so when I make these, I make it in 2 batches. One spicy (for hubby,) one not (for me.) It's great served over a bed of white rice. I have even done this with pork and chicken strips as well.

- Soak wooden skewers in water for at least 10 minutes to prevent them from burning.
- In a bowl, mix together the peanut butter, soy sauce, lemon juice, brown sugar, garlic, ginger, and (if using) pepper flakes.
- If needed, you can add 2 tablespoons of water until it's smooth.
- Stir in the beef strips and coat well. Let stand at room temperature for 15 minutes. Thread strips loosely onto the skewers. Broil or grill for 3-4 minutes on each side.
- Tip:.
- the beef will be more flavourful if you can marinate them for 2 hours (or more) prior to cooking. *Remember to refridgerate them if you are marinating for this long.

- For the chicken marinade, mix together the coconut milk, peanut butter, brown sugar, curry paste, sauces and salt in a large, shallow bowl until well combined and creamy. Once thick, take off heat and stir in the lime juice (start with 1 tablespoon and adjust accordingly to suit your tastes).
