EASY VEGAN BURGERS

Make vegan burgers with polenta and spice with cumin, chilli and coriander. Cook in the oven or on the barbecue and serve with a plant-based salsa

Easy vegan burgers image

Steps:

  • Heat oven to 200C/180C fan/gas 6. Pierce the potato skins and place on a baking tray. Bake for 45 mins until really soft. Remove from the oven and leave to cool. Meanwhile, heat the oil in a small pan, add the onions and chillies, and cook for 8-10 mins until soft. Leave to cool.
  • Peel the potatoes and add the flesh to a bowl with the chilli onions. Mash together with the spices until smooth. Using your hands, mix in the sweetcorn, coriander, half the polenta and some seasoning. Shape the mixture into 10 burgers; it will be quite soft. Carefully dip each one into the remaining polenta; dust off any excess. Place burgers on oiled baking trays and chill for at least 30 mins. You can wrap and freeze the burgers at this stage.
  • Light the barbecue. When the flames have died down, place a large, well-oiled non-stick frying pan or sturdy baking tray on top of the bars. Cook the burgers in the pan or on the tray for 10 mins each side until nicely browned. Alternatively, heat oven to 220C/200C fan/gas 7 and cook on oiled baking trays for 15 mins. Serve in buns with a dollop of salsa, some onion and salad leaves.

6 large sweet potatoes (about 1.5kg/3lb 5oz)
2 tsp oil , plus extra for the trays
2 red onions , finely chopped
2 red chillies , finely chopped (deseeded if you like)
1 tbsp ground cumin
1 tbsp ground coriander
340g can sweetcorn , drained
small bunch coriander , chopped
200g polenta
buns , salsa, onion and salad leaves, to serve

These burgers have been tested and approved by my DD. The original recipe is from Chatelaine. The original name of this recipe is "Amazing Veggie Burgers".

Easy Veggie Burgers image

Steps:

  • Drain and rinse beans with cold water.
  • Drain again and pat dry with paper towels.
  • Add beans, onions, garlic, egg, 2 tbsp barbecue sauce, Worcestershire sauce, oil, salt and pepper to food processor.
  • Pulse until beans are the size of peas.
  • Place pulsed mixture into a large bowl.
  • Add flour and stir until evenly mixed.
  • Add bread crumbs and mix well.
  • Add cheese and mix with your hands (mixture is thick).
  • Divide mixture into six portions.
  • Flour your hands and shape into 1/2-inch thick burgers (if you don't flour your hands the mixture will stick to them).
  • The burgers may be refrigerated in a sealed container for 1 day or frozen until ready to grill.
  • Oil your grill and preheat grill to medium-high.
  • Place burgers on grill.
  • Brush with remaining barbecue sauce.
  • Barbecue with lid down until hot, turning once, for 8 to 10 minutes.
  • Serve on buns with desired toppings i.e. pickles, onions, tomatoes, salsa.
  • For vegetarian make sure you use either a vegetarian Worcestershire sauce or the soy sauce.

19 ounces black beans
1/3 cup onion, coarsely chopped
1 garlic clove, minced
1 egg
3 tablespoons barbecue sauce or 3 tablespoons ketchup
1 tablespoon soya sauce or 1 1/2 teaspoons HP steak sauce
1 teaspoon canola oil
1/2 teaspoon salt
1/2 teaspoon pepper, freshly ground
1/3 cup all-purpose flour
1/2 cup dry breadcrumbs (must be store bought to work) or 1/2 cup cracker crumb, ground in processor until very fine (must be store bought to work)
1/2 cup old cheddar cheese, shredded
6 crusty bread rolls

  • Heat the oil in a small skillet. Add the onion and sauté over medium until translucent. Add the garlic and continue to sauté until the onion is golden, about 5 to 7 minutes.
  • Combine onion mixture with the the remaining ingredients in a food processor and pulse on and off until evenly and finely chopped. Stop the machine to stir once or twice, scraping down the sides as needed.
  • Use a 1/3 measuring cup for smaller burgers, 1/2 cup for larger burgers. Spray the inside of the cup with cooking oil spray or spread a little oil in the cup with paper towel. Grab some of the bean mixture in the cup, leveling it off but not packing it in too tightly. Invert the cup onto the parchment with a sharp tap to release the mixture. Repeat until all of the bean mixture is used up.
