THE BEST BAKED POTATO CASSEROLE EVER!
This recipe comes from the Kirby House Restaurant in Abilene, Kansas. It is a low maintenance but flavorful potluck dish! In addition to the below ingredients, I add Penzey's Brady Street & Sandwich Sprinkle to each layer. But if you do add Sandwich Sprinkle, remember, there is salt already in it. This is a great 'make-ahead' dish that you can refrigerate or freeze until you are ready to bake. Prep time is approximate. Enjoy!

Steps:
- Preheat oven to 350 degrees.
- Spray a 13 x 9 x 2 inch baking dish with nonstick pan coating or grease lightly with solid shortening.
- Cut baked potatoes into 1 inch cubes. Place half in a prepared baking dish; sprinkle half of the salt, pepper and bacon. Top with half of the sour cream & cheese.
- Repeat layers.
- Bake, uncovered, at 350 degrees for 20 minutes or until cheese is melted (It usually takes 30 minutes for me. Also, you can cover with foil if the cheese starts to brown too quickly).
- Sprinkle with chopped green onions to garnish.
BRUNCH POTATO CASSEROLE
This recipe was given to me, and I continue to pass it down to everyone who tries it! Aside from being so delicious, it's so versatile that I've even used it as a side dish for steak! This can be made the night before, then baked the next day -- allow 10 extra minutes of cooking time.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Place potatoes in a large pan, fill with water to cover potatoes, and bring to a boil. Cook until potatoes are just soft. Drain, place in a large bowl. While the potatoes are still hot, gently stir in cheese without mashing potatoes. Continue to stir, every minute or so, until cheese is melted.
- In a separate bowl, stir together mayonnaise, onion, and bacon. Gently stir into potatoes and cheese. Spread into a 13x9-inch baking dish.
- Bake in a preheated oven for 50 minutes.

- Place potatoes on a baking sheet and poke holes in two sides with a fork.
- Coat potatoes with olive oil, and sprinkle with salt and pepper.
- Bake for at 425°F (220°C) for 45 minutes.
- Remove potatoes from oven, and let cool. Chop into 1-inch (2 ½ cm) pieces.
- Lay half of the potatoes on the bottom of a greased 9x13 inch (23x33 cm) baking dish.
- Sprinkle on half of the bacon, spread half of the sour cream, and sprinkle on half of the cheese.
- Repeat for a second layer.
- Bake for 20 minutes at reduced temp of 350°F (180°C), or until cheese is golden brown and the edges start crisping up.
- Sprinkle with chives.

FABULOUS & EASY POTATO CASSEROLE SIDE DISH
Just a few words before I post my recipe: This is one of the best recipe sites I've found on the web and I've looked at dozens over the past 16 years. When I posted my 1st recipe, Blue Mill Tavern Loosemeat Sandwiches, last March, I never expected the response it got (36 reviews!). It's extremely gratifying to know by just sharing a recipe I've been able to give joy to others. Thanks to all of you who have written me and those who've posted a review. It's heartening to know so many of you are trying new things. I've been cooking all my life-I live to cook and cook to live. I feel like I've found some kindred spirits here. Here's another family favorite via my SIL in northern Minnesota. It's been enjoyed by dozens of hungry eaters at my table. If you're looking for low-fat, low-carb, keep on looking cuz this isn't it. This is sinfully delicious, to be savored, not regretted. Consider yourselves forewarned:-) It goes especially well with BBQ ribs, baked ham, dutch oven chicken and is terrific with fresh fried walleyed pike but you try it with whatever you like. It also makes a large amount so it works well for a family gathering or a holiday meal. - Set oven to 350 degrees.
- Butter a 13 x 9-inch baking dish.
- In a large skillet cook the sausages, breaking into pieces with back of the spoon (about 5 minutes).
- Mix in flour, and cook for 1 minute.
- Add in milk or half and half and Parmesan cheese; and cook until the mixture starts to boil and thicken (about 4-5 minutes).
- Season with pepper to taste.
- Pour the shredded hash brown potatoes in the prepared baking dish and toss with salt and pepper (I use seasoning salt for this) then spread out potatoes in the bottom of the dish.
- Top with 1/3 of green onion, then 1-1/2 cups cheddar cheese, then 1/3 green onions, then sausage mixture, then top with remaining cheddar cheese.
- Bake for about 45 minutes, or until potatoes are tender.
- Sprinkle with remaining 1/3 green onions and serve.

- Cook potatoes in skins until fork tender.
- Cool, peel if desired and slice into 1/2 inch slices.
- In a buttered 13x9-inch baking dish, alternate the sliced potatoes and the ham in layers.

- Preheat oven to 375 degrees F (190 degrees C). Lightly grease a medium baking dish.
- To prepare the cheese sauce, melt butter in a medium saucepan over medium heat. Whisk in flour, garlic powder, salt, and pepper. Mix in milk, and stir constantly until thickened. Mix in Cheddar cheese and Swiss cheese, and continue to stir until smooth. Reduce heat to low.

- Prepare potatoes as directed.
