  • In a Medium pot heat and mix everything but salsa and cheese. Once heated,Pour salsa over rice mixture,top with cheese.

  • Cook pasta in a large pot of boiling water until al dente. Drain.

  • Cook and stir ground beef in a large skillet over medium-high heat until crumbly, evenly browned, and no longer pink, 5 to 7 minutes. Drain and discard any excess grease. Stir salsa, onion, mayonnaise, chili powder, and cumin into the beef. Remove from heat.
  • Spread about half the ground beef mixture into the bottom of a 2-quart casserole dish. Spread about half the tortilla chips in a layer atop the beef mixture.   • Brown meat, onion and garlic in large skillet until no pink remains and onion is clear. Drain grease.
  • Add spices, tomatoes, beans and corn and mix well.
  • Continue to cook over medium heat until some of the liquid has evaporated. You want a little liquid but not alot- like a sloppy joe mixture.
  • In an 8x8 greased pan crush a handful of chips and place on the bottom of the pan, adding more chips until you have a good layer. **** I like to get it as dry as possible here so that it holds together like a lasagna. PLEASE use your taste and judgment here and make it as dry or as liquid as you like. :)
  • Layer meat mixture on top of chips.
  • Crush some more chips and place on top of meat. Press down on chip layer to draw some moisture into the top layer of chips.
  • Top with cheese.
  • Bake at 350F for about 20 minutes or until cheese is thoroughly melted.

  • Preheat oven to 425 degrees. Heat a 10-inch cast iron skillet over medium-high heat. Add ground beef; season with salt and pepper. Cook, stirring frequently with a wooden spoon to break up meat, until meat is browned, 10 minutes. Transfer beef to a colander to drain. Discard excess oil.
  • Wipe out skillet, add oil, and return to heat. Add bell pepper and onion. Cook, stirring, until tender and browning, 7 minutes. Add tomato paste; cook, stirring, 1 minute. Add back reserved beef, chili powder, oregano and cumin, tomatoes (with liquid), pinto beans, and 2 tablespoons water; bring to a boil. Remove from heat. Season with salt and pepper.
  • In a large bowl, combine tortilla chips, 1 cup Monterey jack, and 1 cup cheddar cheese. Top casserole with chip mixture followed by remaining 1/4 cup each of Monterey and cheddar cheese.
