EGG AND VEGEMITE SOLDIERS
I grew up with vegemite soldiers, my grandmother made them for my mum, my mum used to make them for me, and then I made them for my kids, and I guess it's just one of those things that will continue. I still love this recipe every now and then and so do my teenage kids and DH. Yes we are all Happy Little Vegemites here!!!! And of course it goes without saying the spread MUST be vegemite........NO alternatives !!!!

Steps:
- Place eggs in saucepan, add enough hot water to cover eggs. Bring to boil and simmer for 3 minutes for soft boiled yolk.
- Spread toast with Vegemite and cut into 2cm fingers(about 3 fingers)to make soldiers. Place eggs in egg cups, slice tops off eggs. Dip soldiers in the soft egg yolk.

Marmite was my favourite childhood spread with toasted bread strips and a soft boiled egg. Mum called the toast, soldiers.

Steps:
- In a small saucepan filled with cold water add the egg, bring to a boil then turn down the heat to a simmer for 3 minutes.
- Toast the bread then spread with the butter.
- Spread 1 teaspoon of marmite on the toast and cut into 3 or 4 long strips.
- When the egg is cooked put into an eggcup and serve with the marmite toasted bread strips.

- Bring a small pan of water to the boil. Carefully lower in the eggs and simmer for 4 minutes. Turn off the heat and leave the eggs in the water for another 15 seconds before removing with a slotted spoon.
- Meanwhile, toast the bread, butter generously and spread thinly with marmite and slice into fat fingers.
- Place your eggs in an egg cup and provide a teaspoon and a knife.
- Cut the tops off the eggs and eat with the buttery marmite toast soldiers and a little salt.
- Cook's note: if you use eggs at room temperature rather than straight from the fridge, they are less likely to crack in the boiling water.
