EGG IN A HOLE

A delicious runny yolk egg cooked in the center of a piece of toast and eaten with a fork is a great way to enjoy an egg in a slightly different way. My kids feel fancy when eating these.

Steps:

  • Melt the bacon grease in a non-stick pan over low heat.
  • Cut a 1 1/2 to 2-inch hole from the center of the bread slice; lay in the hot skillet. When the side facing down is lightly toasted, about 2 minutes, flip and crack the egg into the hole; season with salt and pepper. Continue to cook until the egg is cooked and mostly firm. Flip again and cook 1 minute more to assure doneness on both sides. Serve immediately.

Steps:

  • Cut a 2-inch round from the center of the bread, reserving the round. Melt a nut size bit of butter in a small nonstick skillet over medium heat. Place the slice of bread and the round in skillet and toast lightly, about 1 minute. Crack the egg into the hole and season with salt and pepper, and cook until golden brown, about 2 minutes. Add the remaining butter as needed to brown and crisp the toast. Flip the egg and round, season with salt and pepper. Cook another 2 minutes for a runny yolk, or slightly longer for a set egg.
  • Transfer the egg-in-the-hole to a plate and sprinkle with paprika, if desired. Serve and use the toasted round for dipping into the yolk.

BISCUIT EGG-IN-A-HOLE

Steps:

  • Position an oven rack in the center of the oven and preheat to 425 degrees F.
  • Pulse together the flour, baking powder, sugar and 1 1/2 teaspoons each salt and pepper in a food processor. Add the butter and pulse until pea-sized pieces form. Add the cheese and chives and pulse until just combined. Add the buttermilk and pulse a couple of times until the dough just comes together but is not fully incorporated.
  • Turn the dough out onto a lightly floured surface and pat together gently into a ball. Use your hands to divide the dough into 6 even pieces. Generously coat a large baking sheet with cooking spray.
  • Using the baking sheet as your work surface, pat each piece of dough into a 3 1/2-inch round about 3/4 inch thick. Arrange 3 dough rounds along the top long edge of the baking sheet, spacing them out evenly and making sure there is a 1/2-inch space between the dough rounds and the edges of the baking sheet. Arrange the remaining 3 dough rounds in the same fashion along the bottom long edge of the baking sheet. Cut the center out of each round with a 2-inch round cookie cutter. Arrange these smaller rounds evenly across the middle of the baking sheet.
  • Brush the tops of all the dough pieces with buttermilk and bake until the smaller biscuits are golden, 12 to 15 minutes. Remove them and transfer to a plate.
  • Lay a piece of ham over each of the large rounds. Push each ham piece down into the hole so that it forms a cup. Crack 1 egg into each of the ham cups. If a little of the egg white spills over, it's okay. Sprinkle the eggs with salt and pepper. Bake, rotating the pan front to back after 5 minutes, until the whites are just set and the yolks are still jiggly when you lightly shake the baking sheet, 8 to 12 minutes more.
  • Use a spatula to remove them to individual plates and top each with a smaller biscuit piece for dipping into the egg.

2 1/2 cups all-purpose flour, plus more for dusting (see Cook's Note)
2 tablespoons baking powder
1 tablespoon sugar
Kosher salt and freshly ground black pepper
1 1/2 sticks (12 tablespoons) unsalted butter, cut into small pieces and frozen
4 ounces pepper jack cheese, grated
1 small bunch fresh chives, thinly sliced
1 cup buttermilk, plus more for brushing
Nonstick cooking spray, for the baking sheet
6 round slices Black Forest ham
6 large eggs

Steps:

  • With a biscuit cutter or the rim of a glass, press a hole in the center of the slice of bread.
  • Heat a skillet over medium-low heat and melt in the butter. When the butter is all spread out, place the slice of bread in the skillet and crack the egg straight into the center of the hole.
  • Cook until the egg sets a bit on the bottom, 30 to 45 seconds. Sprinkle the egg with salt and pepper. After about a minute, flip it over with a spatula and salt and pepper the other side.
  • Move the toast around in the skillet, soaking up all of the glorious butter. Let it cook until the yolk feels soft. Here's the key: golden brown toast, white (not browned/burned) whites, soft unbroken yolk. Perfect.

Steps:

  • Cook the bacon in a large nonstick skillet over medium-high heat, flipping, until browned and crisp, 6 to 8 minutes. Remove to a paper towel-lined plate (reserve the skillet).
  • Meanwhile, use a 2 1/2- to 3-inch star cookie cutter to cut out the center of each slice of bread. Reserve the stars.
  • Wipe out the skillet; add 1 tablespoon butter and melt over medium heat. Add 2 bread slices and 2 stars to the skillet and cook until golden brown on the bottom, 1 to 2 minutes. Flip the bread and stars and crack 1 egg directly into each of the cutout centers. Season the eggs with salt, then sprinkle each star with 1 tablespoon cheese. Cover the skillet and cook until the egg whites are set but the yolks are still runny, 2 to 3 minutes. Remove to plates. Wipe out the skillet; add the remaining 1 tablespoon butter and repeat to make 2 more eggs-in-a-hole.
  • Serve the eggs-in-a-hole, cheesy stars and bacon with the strawberries.

8 slices bacon
4 slices white bread
2 tablespoons unsalted butter
4 large eggs
Kosher salt
1/4 cup shredded Jack or cheddar cheese
2 cups strawberries, halved

Steps:

  • Place 2 bread slices in large nonstick skillet with ovenproof handle(To make handle ovenproof, wrap it completely in aluminum foil), then heat to medium. Break egg shell gently and slip an egg into center of each slice. Cook until bottoms of eggs are set, 2 to 3 minutes; gently turn over. Cook until egg whites are completely set and yolks begin to thicken but are not hard.
  • Bread centers can be pan-toasted separately and eaten along with eggs-in-a-hole.
  • Sprinkle 1 tablespoons cheese onto each bread slice.
  • Broil 4 inches from heat just until cheese is melted, about 1 minute. Repeat to cook remaining eggs. Serve with salsa.

Steps:

  • Spray a small pan with non-stick cooking spray.
  • Cut a hole in the middle of the bread.
  • Put the bread in the pan on medium/high heat for about a minute each side.
  • Crack the egg into the hole in the bread and turn until egg is cooked.
  • *The following are optional!*.
  • While the egg is cooking you can sprinkle on the cheese. I like the cheese kind of crispy so I put it on almost right after I crack the egg. If you'd like the cheese a little more runny you should probably wait until it's almost done or even after you take it off the heat.
  • You can toast and/or butter the bread lightly before cooking if you'd like but it's tasty either way.

Steps:

  • Set the broiler to low. Punch out a 2 1/2-inch hole from the center of each bread slice(a biscuit cutter works well). Stir the melted butter, salt, and pepper together and brush the mixture on both sides of the bread slices and cutouts, including the inside of the hole.
  • Toast the slices and cutouts in a large nonstick skillet over medium-low heat until golden, 1 1/2 to 2 minutes. Flip the bread and crack an egg into each hole.
  • Cover and cook until egg sets, 1 1/2 to 2 minutes. Place the skillet under broiler just until the white is fully cooked. Serve immediately. Enjoy!
  • Note:.
  • If desired, just put the egg in the hole when you first put the bread in the pan(and don't cover), flip it and cook the other side of the egg instead of putting it under the broiler.

4 slices brioche bread (or other bread, 1/2-inch thick )
3 tablespoons unsalted butter, melted
1/4 teaspoon sea salt
1/8 teaspoon fresh ground black pepper
4 jumbo eggs
