WONTON MOZZARELLA STICKS

- Place a piece of string cheese near the bottom corner of one egg roll wrapper (keep remaining wrappers covered with a damp paper towel until ready to use). Fold bottom corner over cheese. Roll up halfway; fold sides toward center over cheese. Moisten remaining corner with water; roll up tightly to seal. Repeat with remaining wrappers and cheese., In an electric skillet, heat 1/2 in. of oil to 375°., Fry sticks, a few at a time, for 30-60 seconds on each side or until golden brown. Drain on paper towels. Serve with marinara sauce.

FRIED MOZZARELLA

Steps:
- Remove the egg roll wrappers from the package and cover them with a damp paper towel. This will keep the wrappers from drying out. Have a small glass of water ready for sealing the wrappers.
- Place one egg roll wrapper on a cutting board. With damp fingers, moisten the outer edges of the wrapper. Place a piece of string cheese diagonally on one corner of the wrapper. Roll the cheese inside the wrapper to the halfway point and then fold the edges over the ends of cheese. Continue rolling, making sure the last corner seals. Place on a sheet pan, cover with a damp paper towel and repeat with the remaining cheese sticks.
- Heat 1 inch of oil in a large skillet over medium heat.
- While the oil is heating, warm the marinara in a saucepan over medium heat until warmed through. Place in a small serving bowl.
- Fry the egg rolls until golden and crisp, about 1 1/2 minutes, turning regularly. Remove to a paper-towel-lined plate to drain excess oil.
- Serve alongside the marinara.

- Place flour in a shallow bowl. In another shallow bowl, beat eggs and water. In a third shallow bowl, combine the bread crumbs, Italian seasoning, garlic powder and pepper. Coat cheese sticks with flour, then dip in egg mixture and coat with bread crumb mixture. Repeat egg and bread crumb coatings. Cover and freeze for at least 2 hours or overnight. , Place on a parchment lined baking sheet; spray with cooking spray. Bake, uncovered, at 400° for 6-8 minutes or until heated through. Allow to stand for 3-5 minutes before serving. Serve with marinara or spaghetti sauce for dipping.

- Beat the eggs in a mixing bowl. Whisk in the milk, then set aside. Place the bread crumbs into a plastic bag, and set aside.
- Separate and place an egg roll wrapper onto your work surface with one of the tips pointed towards you. Moisten the two far edges of the wrapper with water. Place a string cheese stick onto the corner nearest you, and roll it in 1/3 of the way, fold over the right and left corners, then continue rolling to the end, pressing to seal. Repeat with the remaining string cheese sticks and egg roll wrappers.
- Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
- Dip the mozzarella sticks into the egg wash, then toss in the bread crumbs. Cook in batches in the hot oil until crisp and golden brown, 3 to 4 minutes.

- Lay the egg roll wrappers flat. Lay a piece of the thinly sliced cheese on top of the egg roll wrapper. From the corner of the wrapper, take your cheese stick and roll towards opposite corner tightly and cut off the extra material of the wrapper on the ends.

- Preheat oven to 400 F. Lightly brush a baking sheet with olive oil or use a silpat or copper baking sheet.
- Lay the egg roll wrappers flat and lightly brush the entire wrapper with water. Sprinkle the garlic powder over egg roll wrapper. Start with the "less is more" strategy.
- Place the mozzarella diagonally across wrapper, being sure that it lines up with two corners. Bring both corners over cheese. Hold the ends in place with one hand and bring the wrapper over the mozzarella, tucking it slightly underneath the cheese.
- Tightly roll the remaining egg roll wrapper over the mozzarella. Add a dab of water to the edges to seal the wrapper. Repeat until all of the mozzarella sticks are wrapped. Lightly brush tops with olive oil and sprinkle with garlic powder. Transfer then to the baking sheet.
