This is for a 1 gallon ice cream maker. You can adjust it to a smaller one. "Cooking time" is according to your ice cream maker's directions.

Steps:
- Combine ingredients and stir briskly about two minutes until sugar is dissolved. (Undissolved sugar crystals may be a cause of large ice crystal formation.)
- Pour into a 1-gallon ice cream freezer can and freeze according to manufacturer's directions.
EGGLESS EASY VANILLA ICE CREAM
Easy to follow recipe I got from the Hamilton Beach Website for my ice cream maker. No eggs which is good for us as we know several little allergic people (who love Ice-cream).

Steps:
- Combine all ingerdients in bowl, mixing well.
- Start the ice cream maker and pour mixture through hole in lid.
- Churn for 20-40 mins or until desired consistancy.
- Variations: Add 1/2 cup mix-ins, such as chocolate chips or chopped nuts, after ice cream has churned for at least 15 minutes or when mixture is thick and has star5ted to freeze.
EASY HOMEMADE EGGLESS VANILLA ICE CREAM
Use this easy recipe to make vanilla ice cream, or add your favorite flavors to it. Again you could adjust this to the size of your ice cream maker. Also, the "cooking" time depends on your ice cream maker. You could use this recipe as a basic and add other flavors such as pureed fruits. You could also add nuts or other goodies. SEE NOTE.

- If you bring the liquids to a simmer is makes a smoother ice cream.
- Also, if you chill the mixture for 4 - 24 hours, it will also increase the flavor.
- VARIATIONS:.
- Fresh Fruit Ice Cream:
- Reduce half-and-half to 1 cup.
- Add 1 cup pureed or mashed fruit (bananas, peaches, strawberries, etc.) and few drops food coloring if desired.
- Proceed as above.
VEGAN VANILLA ICE CREAM
This vegan ice cream is actually easier and faster to make than the cream-and-egg version: There's no extended time spent over the stove awaiting the moment the custard thickens and no reason to worry that you'll scramble the eggs. Infusing the milk with vanilla bean adds great flavor but can be skipped in a pinch. Try it with some of my favorite mix-ins, listed below.

- Add the coconut milk, maple syrup and vanilla bean pod and seeds to a medium pot, and whisk to combine. Bring to a simmer over medium-high heat. Cover the pot, reduce the heat to low and simmer for 5 minutes.
- Dissolve the arrowroot in 1 tablespoon water. Slowly drizzle it into the coconut milk mixture, whisking constantly. As soon as the mixture returns to a simmer, remove it from the heat and whisk in the vanilla extract. Transfer the mixture to a shallow bowl, remove the vanilla bean pod and set aside until the mixture stops steaming, then refrigerate until completely cool.
- Churn the ice cream according to your ice cream maker's instructions (this will take 20 to 30 minutes). Serve immediately, or freeze in an airtight container for up to 6 months.
- For vegan mint chocolate chip ice cream: As the ice cream churns, add 1/4 teaspoon peppermint extract (or more to taste). Once the mixture is ready, add 1/3 cup chopped dark chocolate, and continue churning until combined.
- For vegan strawberry ice cream: Chop 2 cups fresh strawberries, place them in a bowl and add 2 teaspoons each coconut sugar and maple syrup. Stir to combine. Set aside to macerate while the ice cream churns. You can also crush the strawberries slightly with a fork to create a chunky sauce. Once the ice cream is churned, pour in the strawberry mixture and churn until combined.
- For vegan almond butter swirl ice cream: As soon as the ice cream is churned, drizzle in 1/3 cup almond butter and continue churning for a few seconds to distribute.
NO-CHURN VANILLA ICE CREAM
No special equipment is needed to make this ultra-creamy ice cream. Eat it plain or add some of our fun suggested stir-ins.

- For the ice cream: Whisk together the condensed milk, vanilla and salt in a large bowl; set aside.
- Whip the cream with a mixer on medium-high speed until firm peaks form, about 2 minutes. Fold about 1 cup of the whipped cream into the condensed milk mixture with a rubber spatula until combined, then fold the lightened mixture into the whipped cream until well blended. Pour into a chilled 9-by-5-by-3-inch metal loaf pan, and freeze, covered, until thick and creamy, like soft-serve, about 2 hours. Swirl in any desired mix-ins with a spoon. - Bring 2 1/4 cups milk just to a boil over medium heat in a medium-sized saucepan.
- While milk is heating, whisk sugar, 1/4 cup cold milk, cornstarch, and salt together in a mixing bowl until smooth. Whisk cold mixture into the boiling milk and bring to a boil over medium heat; let boil for 3 minutes, whisking constantly until mixture is very thick. Remove from heat.
- Place chocolate into a mixing bowl.
- Bring remaining 1/2 cup cold milk just to a boil over medium heat in a small saucepan. Pour hot milk over chocolate and let stand until chocolate melts, about 1 minute. Whisk until smooth.
- Stir chocolate mixture into cornstarch-milk mixture. Force through a fine-mesh sieve into a mixing bowl. Let cool slightly, stirring frequently to prevent a skin from forming. Cover surface with wax paper. Chill in a refrigerator until cold, at least 1 1/2 hours.
- Pour mixture into a gelato or ice cream maker. Freeze according to manufacturer's instructions, about 15 minutes. Transfer to an airtight container and freeze in a freezer until hardened if necessary.

EGGLESS HOMEMADE ICE CREAM
This is a fabulous recipe! We had to come up with it a few years ago because my sister was allergic to eggs.

Steps:
- Mix together and put in ice cream freezer until done to desirable thickness.
- *Fun for the kids: Blend all ingredients in blender.
- Divide mixture among Ziploc sandwich baggies.
- Seal the baggies; then place them into gallon size baggies.
- Pour dry ice into the gallon baggies making sure to completely surround the smaller baggies.
- Seal the gallon baggies.
- Then let the children squeeze and punch on the baggies continuously.
- You'll have to fill up the dry ice a few times before getting it to desired consistency, but you do that in an ice cream freezer anyway.
- Besides this is an excellent learning tool for chemistry and it's fun for the kids, too!
