EGGS ON THE HALF SHELL

What a fun way to serve breakfast eggs. Just be sure to bake an extra potato or two for dinner one night and this dish will come together in a snap in the morning. It's an impressive way to serve overnight guests or your family a delicious breakfast.

Steps:

  • Slice the cooked potato in half lengthwise.
  • Scoop out some of the inside potato.
  • Fill the hollow with the cooked eggs.
  • Top with grated cheddar cheese and heat in your microwave until the cheese melts.
  • Serve with hot sauce and season to taste.

Potatoes on the Half Shell image

Steps:

  • Preheat oven to 350 F degrees.
  • Scrub the potatoes and place them in the oven until done, about 1 hour.
  • Cut each potato in half, lengthwise. Carefully, scoop out the potato and place in a bowl. Set the potato shells aside to use later.
  • While still hot, mash the potatoes with the milk, beaten egg, and butter. Beat until fluffy.
  • Season with salt and pepper, to taste. Add in the onion.
  • Spread the potato shells with butter and fill each shell with the potato mixture.
  • Sprinkle the tops with parmesan cheese.
  • Bake until tops are browned.
