Steps:
- Heat a large skillet over medium heat. Add the bacon and cook until golden, 3 to 4 minutes per side. Drain the bacon on paper towels. Let cool, then chop.
- Meanwhile, place 1/4 of the lettuce in the bottom of a trifle bowl or large glass bowl. Top with the peas and then another 1/4 of the lettuce. Top with the carrots.
- Arrange the eggs on top, facing them outwards against the side of the bowl. Top with another 1/4 of the lettuce, corn, then the remaining lettuce.
- Sprinkle with the cheese, then top with the tomatoes and bacon. Serve with the herb ranch dressing on the side.
- Whisk together all of the ingredients in a small bowl until combined. Makes about 2 cups.
HEARTY EIGHT-LAYER SALAD
I'm a 77-year-old great-grandmother and have been making this satisfying salad for years. It's my most requested recipe for family gatherings. - Cook pasta according to package directions; drain and rinse with cold water. Drizzle with oil; toss to coat. , Place the lettuce in a 2-1/2-qt. glass serving bowl; top with pasta and eggs. Sprinkle with salt and pepper. Layer with ham, salami and peas. Combine mayonnaise, sour cream, green onions and mustard. Spread over the top. Cover and refrigerate for several hours or overnight. , Just before serving, sprinkle with cheese and parsley.

Steps:
- In large glass salad bowl, arrange spinach seasoned with salt, pepper and 1 teaspoon sugar.
- Press down.
- Add layers of bacon, eggs, and lettuce.
- Press down.
- Season again with salt, pepper and 1 teaspoon sugar.
- Add layers of peas and onion.
- Combine mayonnaise and sour cream and completely cover salad.
- Top with cheese.
- Cover and refrigerate overnight.
- Toss just before serving.
EIGHT-LAYER DIP

- For the refried beans, in a medium skillet over medium heat, add the chopped bacon and render until crisp, 7 to 9 minutes. Remove the bacon to a paper towel-lined plate with a slotted spoon and reserve. Discard all but 2 tablespoons of bacon grease from the skillet.
- Return the skillet to medium heat and add the beans, green chiles, cumin and hot sauce to taste. Cook, stirring frequently, until heated through, 2 to 3 minutes. Remove from the heat, taste and add more cumin or hot sauce if desired. Reserve.
- For the pico de gallo, in a medium bowl, mix together the cilantro, tomatoes, jalapeno, onion, 2 tablespoons of the lime juice and a pinch of salt. Taste, adjust the seasoning and reserve.
- For the guacamole, scoop the avocado into a medium bowl. Add a pinch of salt, the remaining lime juice, 1/4 cup of the pico de gallo and 2 tablespoons of the juices from the bottom of the bowl. Mix together, taste and adjust the seasoning.
- In a glass dish, begin layering in the following order: refried beans, Cheddar cheese, sour cream, guacamole, black olives, cotija, bacon and pico de gallo to finish. Enjoy.
EIGHT-LAYER SALAD
Steps:
- Combine the farro with the stock or water in a large saucepan and bring to a boil. Reduce to a simmer, cover and cook until tender, about 30 minutes; drain off any excess liquid. Season with salt and pepper and toss with 1 tablespoon of the olive oil. Set aside to cool.
- Preheat the oven to 400 degrees F.
- Toss the squash with the remaining 2 tablespoons olive oil, a few pinches of salt, a few turns of pepper and a pinch of crushed red pepper. Roast until tender, 25 to 30 minutes. Let cool.
- Make the dressing by combining the yogurt, basil, mayonnaise, white wine vinegar, Dijon and garlic in a medium bowl. Season with salt and pepper.
- In a large glass serving bowl, layer the farro, kale, squash, prosciutto, shallots, dressing, Parmesan and almonds. Finish with the remaining basil and a few turns of pepper.
LAYERED SALAD

- For the salad: In a clear glass bowl, layer the salad ingredients in the order they appear above, concentrating the ingredients around the perimeter of the bowl and filling in any gaps in the center with lettuce as needed. Start with a good layer of iceberg on the bottom, followed by the tomato wedges, spinach and Perfect Hard Boiled Eggs. Sprinkle the egg layer generously with salt and pepper. Layer on the bacon, green onions and Cheddar, and end with the peas.
- For the dressing: Combine the mayonnaise, sour cream and sugar in a small bowl and mix well.
- Pour the dressing over the top of the peas and spread evenly, bringing the dressing all the way out to the edges of the bowl. Sprinkle with the dill and parsley. Cover and refrigerate until serving.
- Place the eggs in a saucepan, cover with water and bring to a boil. Turn off the heat and allow the eggs to sit in the water for 20 minutes. Drain off the water and add ice to the pan on top of the eggs. Set aside to chill.
8 LAYER JELLO SALAD
This is beautiful when cut, all the layers and colors of the jello. It helps at it taste good, too. Very refreshing. For the 4th of July I have done red, white and blue, then cut it with star shaped cookie cutter. Enjoy!!! Great hit at church pot lucks!!!

- Dissolve 1 pkg of jello in l ½ cups of Boiling water- (one at a time).
- Pour into 9 X 13 pan and let gel in level frig-.
- (yes you need to make sure your frig is level).
- In saucepan, combine 2 cups milk and 1 cup sugar, bring to boil.
- (careful not to scald) when boiling starts remove from heat.
- In mean time, dissolve 2 env unflavored gelatin in ½ cup cold water,
- slowly add to milk mixture after you remove it from the heat.
- Let mixture cool then add sour cream and 2 tsp vanilla, mix well.
- Pour 1 cup milk mixture over jello layer, let chill approximately 1 hour. Then carefully add next layer of jello, let chill approximately 1 hour or until solid.
- Continue until you have 8 layers (4 jello and 4 milk mixture).
- This can be made a day or two in advance.

SOUTHWEST 8 LAYER SALAD
Steps:
- 1st: Brown hamburger in a pan. When done put taco seasoning in (whole package). Let cook for 2 minutes. Put hamburger mixture in a bowl and put it in the freezer.
- 2nd: Open black beans and put in strainer. Wash beans till there is no black in the water. Set aside.
- (Please go stir the hamburger mixture in freezer.)
- 3rd: In an extra large liquid measuring cup put 4 cups of sour cream and 1 cup salsa. Stir until fully mixed.
- (Please go stir the hamburger mixture once again.)
- 4th: In a large dish that you would like your salad presented in start adding these ingredients:
- 1: salad mix
- 2: beans
- 3: hamburger mixture
- 4: peppers
- 5: sour cream mixture
- 6: Kraft Cheese
- 7: green onions
- Put plastic wrap over it and let it sit all night in fridge. When you are ready to serve put the crushed cheese Doritos on top and enjoy the meal.

- In bottom of salad bowl, break lettuce into bite-size pieces.
- Layer celery pieces followed by green onions sliced with green parts.
- Next layer frozen peas (do not thaw).
- Layer cauliflower cut into small pieces.

- Sprinkle bacon bits on top.
- Do not toss salad until you are ready to eat!

A tried-and-true staple in my family!! This is a wonderful salad with many different tastes and textures. The water chestnuts and peas add a wonderful crunch. Great to take to pot-lucks and picnics. - In large salad bowl, layer ingredients in order given, except for mayonnaise, sugar, and bacon.
- In separate bowl, combine mayonnaise and sugar, and mix well.
- Spread mayonnaise mixture over top of salad.

- Toss to serve, or use large spoon to dig through layers to get a little bit of everything for each serving.

SEVEN LAYER POTATO SALAD
A new twist on the old favorite Seven Layer Salad, based on potato salad rather than the usual iceberg lettuce for something a bit more substantial. Bacon, eggs, peas, and cheese are traditional in a Seven Layer, but a little bite from radishes, onions, and a few surprise ingredients makes this one a little more interesting.

- Mix dressing ingredients together, refrigerate until ready to use.
- Cook bacon crisp, crumble, and set aside.
- Meanwhile, cut potatoes in halves or quarters to get bite sized pieces. Boil in well salted water until fork tender. Allow to cool slightly, and mix with half of the dressing.
- Hard boil eggs, allow to cool, remove shells.
- Assemble the salad in a trifle dish or other clear straight sided bowl. Place potatoes on bottom, followed by peas, bacon, onions, the other half of the dressing, cheese, sliced or crumbled eggs, and radishes.
7 LAYER SALAD
This 7 layer salad recipe sounds like a bunch of vegetables thrown together, but every occasion people ask me if I will make this, it is really gooooooood. Overnight chilling not included in preparation time.
