As I noshed my way through Central Market in Dallas today, this was one of the dishes I sampled in the seafood aisle. Such a simple recipe with such an outstanding flavor!

ELAINE'S HOT MARYLAND CRAB DIP
Elaine is my friend Kelly's mom and she makes a wonderful hot crab dip. Because her husband is big in politics in a small state, Elaine is on a first-name basis with many people whose names & faces you'd recognize, but she leaves the politics to her husband and is the center of her children's & grandchildren's lives. She is...

Steps:
- 1. Measure the cream cheese, sour cream, mayo, lemon juice, worcestershire sauce, dry mustard, and garlic powder directly into a large mixing bowl. Using a mixer, beat all ingredients together until well-blended.
- 2. In a separate bowl, pick through the crab meat, looking for and removing any shell pieces.
- 3. Add the crab to the mixing bowl, along with the shredded white cheddar cheese. Fold GENTLY to incorporate the crab & cheese with the other ingredients. (If you're using lump crab meat, you'll want to keep the lumps!)
- 4. Spray a baking dish with cooking spray. GENTLY pour the mixed ingredients into the baking dish. Now, if you like Old Bay seasoning, sprinkle it over the top. (If you REALLY like Old Bay, you might even stir some in first.) If you're not an Old Bay fan, you can sprinkle on some paprika, if you want. Just for "pretty."
- 5. Bake at 350 degrees F for 25-30 minutes, until the dip is melted and bubbly.
- 6. Serve hot with savory crackers, flatbread pieces, or toasted bread points.
- 7. ESPECIALLY YUMMY OPTION: Maryland Crab Pretzel Spoon crab dip over a large soft pretzel, then top with shredded cheese. Bake until cheese melts. Pull apart to eat. =^..^=
SPICY CRAB DIP
This style of crab dip, often referred to as Maryland crab dip because of its Chesapeake Bay origins, makes for a festive appetizer. Here, it's served hot out of the oven and is extra creamy thanks to the combination of cream cheese and a little mayonnaise. Though crabs are plentiful this time of year - and you can certainly make this with freshly steamed and picked meat if you'd like - canned lump crabmeat makes this dish simple to assemble. Just be careful to leave the clumps of meat as intact as possible when mixing. A sprinkle of cayenne pepper and a generous douse of hot sauce add heat to this flavorful dish.

Steps:
- Heat oven to 375 degrees. Grease an 8-inch cast iron skillet or 1-quart baking dish with butter.
- In a large bowl, combine the cream cheese, mayonnaise, shallot, chives, garlic, lemon juice, Cajun seasoning, mustard powder, Worcestershire sauce and 1/3 cup Parmesan. Stir until well combined. Add the crabmeat and gently stir until just combined, trying to not break up the large lumps. Season with pepper to taste.
- Scrape into the prepared skillet and smooth the top. Sprinkle the ground butter crackers and remaining 2 tablespoons Parmesan on top.
- Bake until golden brown and bubbling, 20 to 25 minutes. Cool for 10 minutes, then sprinkle with ground cayenne, hot sauce and chives. Serve with baguette, celery sticks, carrots, additional crackers and more hot sauce.
EILEEN'S CRABMEAT DIP
When I was employed in the banking profession, at Christmas while decorating the offices, staff members would bring in an item for potluck. This recipe was one that I particularly liked as it was a warm dip (as opposed to chilled dips)and really tickled the tastebuds served on crackers.
