SPAGHETTI AND MEATBALLS
Steps:
- For the meatballs: Preheat the oven to 425 degrees F.
- Combine the bread with the milk in a large bowl. Let soften for about 1 minute, then mash to a paste with a fork. Add the beef, pork, egg, Worcestershire, granulated garlic, granulated onion, 2 tablespoons pecorino, 2 teaspoons salt and 1/2 teaspoon pepper. Mix until well blended. Form into twelve 2-inch balls (about 1/4 cup each) and place on a plate or tray.
- Heat the olive oil in a large skillet over medium heat. Sear the meatballs on all sides until a crust forms, about 2 minutes per side. Transfer to a baking dish.
- Bake until cooked through, 20 to 25 minutes.
- For the pasta and sauce: In a large pot, cook the spaghetti according to package directions. Drain and set aside.
- To a pan over medium heat, add the olive oil, tomatoes, broth, butter, and basil and parsley. Simmer until the tomatoes are soft, 4 to 5 minutes. Add the pecorino to help thicken the sauce, and season with a pinch of salt and pepper. Stir in the cooked pasta and top with the meatballs. Garnish with some more pecorino and basil-parsley mix.
LIGHTER SPAGHETTI AND MEATBALLS

Steps:
- Pulse the sandwich bread in a food processor to form coarse crumbs. Add the beef, 1/4 cup onion, mushroom, 1 tablespoon garlic, parsley, and egg white; season with salt, pepper and nutmeg; pulse again to finely chop and combine. Portion into about 20 meatballs (about 1-inch in diameter) and place on a plate.
- In a medium saucepan, heat the oil over medium heat; add the remaining garlic and onion. Cook, stirring occasionally, until tender, about 10 to 12 minutes. Stir in the tomatoes and broth. Tie sprigs of basil and thyme together with kitchen twine; add to the tomatoes. Bring to a simmer and cook, stirring occasionally, 20 minutes. Add the meatballs and continue to simmer, without stirring, until the meatballs are partially cooked, about 10 minutes. Turn the meatballs; cook 10 minutes more or until fully cooked.
- Meanwhile, cook the pasta according to package directions in boiling salted water; serve the meatballs and sauce over the spaghetti.
ELEGANT WHITE SPAGHETTI AND MEATBALLS
This creamy recipe has chicken meatballs. The original asks you to grind your own chicken breasts in a food processor, but I've posted it using pre-ground meat. Don't be shy with the garlic and spices!

- Add minced garlic, beaten egg and crushed saltines to ground chicken.
- Preheat oven to 375°F.
- Form into 1 inch balls and bake in single layer for about 13 minutes.
- Meanwhile saute mushrooms in oil until tender.
- Add minced garlic, nutmeg for a minute or two more.
- Add flour and wine, loosening all particles.
- Add chicken broth, bring to a boil and simmer for 15 minutes.
- Stir in cream cheese and parsley. Salt and pepper to taste, add meatballs and simmer about 10 minutes more.
- Serve atop hot cooked pasta with a green side salad!

SPAGHETTI WITH MEATBALLS

- For the sauce: Heat the oil in a large Dutch oven over medium heat. Add the ribs and brown evenly, about 4 minutes. Add the onions, sprinkle with salt and cook until translucent, 2 minutes. Add the garlic and cook until everything is soft but not browned, about 3 minutes. Add the white wine, stirring to deglaze the pan. Add the tomatoes along with the oregano, red pepper flakes if using, bay leaf and Parmesan rind. Bring the sauce to a simmer, reduce the heat to its lowest possible setting and continue to cook until reduced by about a third, for up to 8 hours.
- Taste for seasoning and add more salt if necessary. Remove the bay leaf. If not using right away, let the sauce cool, and then cover and refrigerate for up to 1 week or freeze for up to 2 months. Makes about 2 quarts.
- For the meatballs and sauce: In a small saute pan over medium heat, add 1 tablespoon of the oil, the garlic and shallots and sweat until translucent, 2 to 3 minutes.
- Soak the bread in the milk in a medium bowl.
- In a separate bowl, combine the beef with the ricotta, basil, parsley, Parmesan, salt, egg and the cooked shallots and garlic. After the bread has soaked up the milk, remove it from the bowl and ring out the remaining liquid. Thoroughly mix the bread into the meat mixture.
- Form the meat mixture into 2-inch balls using about 1/4 cup for each. Heat the remaining olive oil in a large frying pan and add the meatballs. Cook until golden on the outside, 2 to 3 minutes per side.
- Place Yia Yia's Neapolitan Sauce in a large saucepan and add the meatballs. (Keep the frying pan for finishing the pasta.) Bring to a simmer and simmer about 30 minutes.
- For the spaghetti: Bring a large pot of salted water to a boil. Cook the spaghetti al dente, according to the package directions.
- Add a cup or two of the sauce to the empty meatball pan over medium heat. Drain the spaghetti and add it to the pan, along with the basil leaves, Parmesan and butter. Toss to coat. Transfer to a serving platter, top with the meatballs and ribs from Yia Yia's Neapolitan Sauce and serve with the remaining sauce on the side.
CREAMY SPAGHETTI AND MEATBALLS
I am always looking for new ways to serve spaghetti and this looked too good not to try. Use a spicy sauce if possible. Serve with a nice green salad and crusty bread. I used my own frozen meatballs and homemade sauce.You know how much your family will eat so change the sauce and pasta accoordingly.

- Bring a large pot full of water to boil. Pour pasta sauce and undiluted mushroom soup into a large saucepan.
- Bring to boil over med heat , whisking frequently about 6 minutes.
- Stir in frozen meatballs into sauce, reduce heat to med low.
- Cover and simmer stirring occasionly until meatballs are heated through out. 10 -12 minutes.
- While sauce is cooking add pasta to the boiling water and cook to package directions.
- Drain pasta and return to saucepan and add meatball sauce and cilatro and toss.

ALL DAY SPAGHETTI AND MEATBALLS
This recipe requires a full day of cooking but the effort is worth it. My mom got this recipe over 50 years ago from an Italian friend. The baking soda is the secret ingredient to making this recipe a success so don't eliminate it. When finished, it can almost be eaten with a fork. I quadruple the recipe so I have some to freeze.

Steps:
- Mix all meatball ingredients, roll in to balls and brown in skillet. Cool and refrigerate until 1 hour prior to serving. Olive oil may be needed to brown these if using very lean beef.
- In the skillet, add chopped onions and cook until tender but not soft.
- Add garlic and can of tomatoes. If using whole tomatoes, I mash them briefly in the skillet with a potato masher.
- Cook until mixture comes to a boil.
- Put in to a large dutch oven or sauce pan.
- Add remaining ingredients except for baking soda, parmesan cheese, olive oil, salt and pepper.
- Bring to a quick boil and immediately reduce the heat to medium low as this sauce will burn.
- Add a pinch of baking soda, stir well and allow to simmer uncovered for 2 hours.
- Taste the sauce for acidity. If acid level (or tang) is still high, add another pinch of baking soda and stir well. At this point do not taste the sauce as all you will taste is baking soda.
- Cook two more hours.
- Stir occasionally to prevent sticking. If needed, add a small amount of olive oil.
- Eventually, you will start seeing the sauce getting darker around the edges of the pan. At this point you can season with salt and pepper and add the cooked meatballs.
- Cook one additional hour.
- One half hour prior to serving, stir in the parmesan cheese. This will thicken the sauce quickly.
- This sauce is best served the next day.
