TLC SANDWICHES
Show your family some Tender Loving Care with healthy TLC - Tofu, Lettuce and Cucumber. It's a fun twist on a BLT that is unbelievably yummy, with easy homemade salty, smoky tofu "bacon." For quick lunch assembly, prepare the tofu the day before and refrigerate it in a sealed container. Substitute mashed avocado for the mayo, if you wish to make it vegan. Enjoy! Adapted from Whole Foods.

Steps:
- Wrap tofu snugly in 4 or 5 layers of paper towels and arrange on a plate. Cover with a second plate and balance a heavy can or two on top to weigh down the plate; set aside to drain for 20 minutes. Unwrap tofu and cut into 12 slices.
- Preheat oven to 425°F.
- In a wide, shallow dish, whisk together liquid aminos, nutritional yeast, smoked paprika and 1 tablespoon water. Arrange tofu in dish, turn to coat well with marinade and set aside for 15 minutes.
- Spray a large baking sheet with cooking spray and arrange tofu slices about one inch apart in a single layer; spray all over with cooking spray.
- Bake, flipping tofu halfway through, until firm and golden brown, about 30 minutes; set aside to let cool.
- Spread mayonnaise(or mashed avocado) onto 4 bread slices, then top with lettuce, cucumbers, tofu and remaining bread and serve. Enjoy!

Steps:
- On 2 separate plates, spread out the walnuts and the mini chocolate chips. Scoop about 1/3 cup ice cream and press between 2 cooled cookies. Roll half of each sandwich in chips and half in walnuts. Repeat with remaining cookies. Freeze immediately until firm, about 1 hour, and then serve.
- Position an oven rack in the center of the oven and preheat oven to 375 degrees F.
- In a medium bowl, using a wooden spoon, mix the vegetable shortening and sugar until light and fluffy. Add the milk and vanilla and mix until smooth. Beat in the egg until incorporated.
- In a separate bowl, whisk together the flour, salt, cocoa, and baking soda until smooth and combined. Gradually mix the dry ingredients into the wet mixture until fully incorporated. Do not over mix or the dough will become tough.
- Form about 2 tablespoons of dough into 1 1/2-inch balls and place on ungreased cookie sheets about 2 inches apart. Press down lightly and gently round edges. Bake for about 12 minutes, rotating the pan halfway through baking.
- Remove from oven and let cool completely.

- Corned Beef with Horseradish Slaw Toss 1/2 cup shredded green cabbage with 1 tablespoon sour cream, 2 teaspoons each horseradish and water, 1 teaspoon grainy mustard and a pinch each of salt and pepper.
- Roast Beef and Smoked Gouda Spread honey mustard on 2 slices challah bread. Sandwich sliced roast beef, sliced smoked gouda and romaine lettuce between the bread slices.
- Spicy Roast Beef and Brie Spread 1 slice sourdough bread with pepper jelly. Top with sliced roast beef, sliced brie and watercress; season with salt.
- Italian Deli Mix 3 tablespoons olive oil with 2 tablespoons white wine vinegar, 1 grated small garlic clove and 1/2 teaspoon each Italian seasoning and sugar.
- Italian BLT Cook 4 thin slices pancetta in a skillet over medium-high heat until crisp, 5 minutes. Mix 2 tablespoons mayonnaise with 1 tablespoon chopped basil; spread on 2 slices country bread.
- Broccoli Rabe with Lemon Ricotta Heat 2 tablespoons olive oil and 1 smashed garlic clove in a large skillet over high heat. Add 3 cups trimmed broccoli rabe, season with salt and cook, stirring, until charred and tender, 4 minutes.
- Tomato and Mozzarella with Pesto Toss 1/3 cup each quartered cherry tomatoes and mini mozzarella balls, 1/4 cup chopped roasted red pepper, 2 teaspoons minced shallot, 2 tablespoons olive oil and 1 tablespoon red wine vinegar; set aside 15 minutes.
- Grilled Eggplant with Mozzarella Slice 1 small Japanese eggplant 1/2-inch thick; toss with olive oil and salt. Grill over medium-high heat, turning, until charred, 5 minutes.
