STRAWBERRY CAKE FROM SCRATCH
It is hard to find scratch strawberry cakes, so this one is worth it weight in gold to me as a caterer. I made this cake for a child's birthday party. It was a major hit! Frost with cream cheese or vanilla frosting - or for a treat, use a chocolate glaze!

- Preheat the oven to 350 degrees F (175 degrees C). Grease and flour two 9 inch round cake pans.
- In a large bowl, cream together the butter, sugar and dry strawberry gelatin until light and fluffy. Beat in eggs one at a time, mixing well after each. Combine the flour and baking powder; stir into the batter alternately with the milk. Blend in vanilla and strawberry puree. Divide the batter evenly between the prepared pans.
- Bake for 25 to 30 minutes in the preheated oven, or until a small knife inserted into the center of the cake comes out clean. Allow cakes to cool in their pans over a wire rack for at least 10 minutes, before tapping out to cool completely.

ELSIE'S STRAWBERRY CAKE
This cake was one my Mother made all the time. The recipe is cherished by our family because Mama made it so often--and it was almost a signature cake of hers. My Mother made fantastic cakes--and she seemed to changed the recipes all the time--two were rarely exactly the same... The cake is very moist and so flavorful!

- Preheat oven to 350 degrees F.
- Combine cake mix and dry gelatin, oil and milk. Blend well. Add eggs and beat four (4) minutes. Add 1/2 c. coconut, 1/2 c. pecans and 1/2 c. strawberries - blending only. (Note: If frozen strawberries are used they should be thawed. Strawberries should be mashed and well drained.) Bake in greased and floured pan 25 to 30 minutes or until "springy" to touch.
- Have combined when cake comes from oven: Powdered sugar, melted butter, 1/2 c. strawberries, 1/2 c. pecans, 1/2 c. coconut and the extracts.
- Cream sugar, butter. Add coconut, pecans, extracts, and strawberries--blend only.
- Make holes in cake (using fork tines) while hot and pour mixture over cake, pressing down with fork to force topping down into the cake.
- Cool before serving. Cake can be made completely with topping and frozen for future use. (Note: due to the high acidity level of the strawberries, cover cake with plastic wrap before covering with aluminum foil, otherwise holes will appear in the foil.)

- OK FOLLOW THIS EXACTLY. She doesn't say but prepare the Angel Food pan in the normal manner.
- NOTE: Sift the flour and the sugar together five time.
- Put the whites, salt in a bowl and beat on number eight until foamy then add the tartar and beat on number 8 until stiff and stand in peaks, that is about 2 1/2 to 3 minutes. DO NOT OVER BEAT UNTIL DRY.
- Sprinkle in gradually: the granulated sugar while beating on number seven speed. Beat only until sugar is blended, about 1 1/3 minutes then turn to number one speed and add the vanilla and almond extracts.
- Sprinkle the sifted flour and sugar. Mix evenly and quickly. Beat only enough to blend for about 1 1/2 minutes.
- Pour into pan. Cut thru the batter with a knife three times.
- Bake at 375°F for 35 minutes.
- Remove from oven and cool in pan upside down for about 1 hour.

STRAWBERRY CAKE

- Butter and line the bases of three 18cm cake tins. Heat the oven to 180C/160C fan/gas 4. Blend the butter and sugar in a food processor until smooth and creamy. Add the eggs, flour and yogurt and blend again. Add 200g strawberries (save the best ones to decorate) and the vanilla. Blend once more, until the mixture is well combined.
- Divide the cake batter evenly between the three cake tins. Spread and smooth the tops with a spatula, then bake for 25-30 mins, until the cakes have risen and a skewer inserted into the centre comes out clean. Return to the oven for another 5 mins if any wet mixture clings to the skewer. Leave in the tins for 5 mins, then turn onto a wire rack and leave to cool completely. The cakes can be made up to two days before icing, or frozen for two months.
- For the icing, blend the butter and half the sugar until smooth and creamy, add the soft cheese and the remaining sugar and blend again. Be careful not to over mix as the icing will become runny. (If you do overmix, don't worry - keep mixing with an electric whisk and it'll thicken back up).
- Layer the cakes with the jam and half the icing. Invert the final cake on top, so the base of the cake it now the top, giving you a flat surface. Pile the rest of the icing on top of the cake, using a palette knife to spread the icing over the top and down the sides. Save a little icing to pipe rosettes around the edge of the cake, if you like. Top with the remaining strawberries. Can be made up to a day ahead of serving, keep somewhere cool or in the fridge. Will keep for three days.

- Make the reduced strawberry puree and allow it to cool completely. See note. You can make it a few days ahead of time and store it covered in the refrigerator or cover and freeze it for up to 3 months. Thaw before using in the recipe.
