Emeril's Lasagna image

Steps:

  • Preheat the oven to 350 degrees F.
  • In a mixing bowl, combine the ricotta, Provolone, Mozzarella, Romano, egg, milk, basil and garlic. Mix well. Season with salt and pepper. To assemble, spread 2 1/2 cups of the meat sauce on the bottom of a deep dish lasagna pan. Sprinkle 1/4 of the grated cheese over the sauce. Cover the cheese with 1/4 of the dried noodles. Spread a 1/4 of the cheese filling evenly over the noodles. Repeat the above process with the remaining ingredients, toping the lasagna with the remaining sauce. Place in the oven and bake until bubbly and golden, about 45 minutes to 1 hour. Remove from the oven and cool for 10 minutes before serving. Slice and serve.
  • In a large nonreactive saucepan, over medium heat, add the oil. In a mixing bowl, combine the meat. Season with salt and pepper and mix well. When the oil is hot, add the meat and brown for 4 to 6 minutes. Add the onions, celery, and carrots. Season with salt and pepper. Cook for 4 to 5 minutes or until the vegetables are soft. Add the garlic and tomatoes. Season with salt and pepper. Continue to cook for 2 to 3 minutes. Whisk the tomato paste with the stock and add to the tomatoes. Add the thyme, bay leaves, oregano, basil and red pepper. Mix well. Bring the liquid to a boil, reduce the heat to medium and simmer for about 2 hours. Stir occasionally and add more liquid if needed. During the last 30 minutes or cooking, reseason with salt and pepper and stir in the cheese. Remove from the heat and let sit for 15 minutes before serving.

4 cups beef stock or water
2 sprigs of fresh thyme
2 bay leaves
2 teaspoons dried oregano
2 teaspoons dried basil
Pinch of crushed red pepper
2 ounces Parmigiano-Reggiano

Pasta with Pumpkin and Sausage image

Steps:

  • Heat a large, deep nonstick skillet over medium high heat. Add 1 tablespoon of olive oil to the pan and brown the sausage in it. Transfer sausage to paper towel lined plate. Drain fat from skillet and return pan to the stove. Add the remaining tablespoon oil, and then the garlic and onion. Saute 3 to 5 minutes until the onions are tender.
  • Add bay leaf, sage, and wine to the pan. Reduce wine by half, about 2 minutes. Add stock and pumpkin and stir to combine, stirring sauce until it comes to a bubble. Return sausage to pan, reduce heat, and stir in cream. Season the sauce with the cinnamon and nutmeg, and salt and pepper, to taste. Simmer mixture 5 to 10 minutes to thicken sauce.
  • Return drained pasta to the pot you cooked it in. Remove the bay leaf from sauce and pour the sausage pumpkin sauce over pasta. Combine sauce and pasta and toss over low heat for 1 minute. Garnish the pasta with lots of shaved cheese and sage leaves.
  • Serve pumpkin sausage pasta with pumpernickel or whole grain bread and Spinach Salad with Apple and Red Onion.
  • Place spinach, apple, and onion in a salad bowl. Place oil, vinegar, mustard and honey in a small plastic container and fit lid on container. Shake dressing to combine, 1 minute. Pour dressing over salad, toss, and season with salt and pepper, to taste.

Pumpkin Sausage Lasagna image

Steps:

  • preheat oven to 375°F.
  • heat a large sauté pan over medium-high heat with 2 tablespoons EVOO, about two turns of the pan. Add the sausage and cook until golden brown, breaking the meat up as it cooks with a wooden spoon or rubber spatula. Push the meat to one side of the pan and add the eggplant, onion and garlic. Cook 7-8 minutes, until tender, then season with salt and freshly ground black pepper.
  • While the veggies are cooking, place a medium-size sauté pan over medium-high heat and melt the butter. Whisk in the flour and cook the mixture for about 1 minute. Whisk the milk into roux, breaking up any clumps. Bring the mixture to a bubble and add the pumpkin puree and nutmeg. Season the sauce with salt and freshly ground black pepper, reduce the heat and simmer the sauce for 2-3 minutes, until slightly thickened.
  • Spread about 1 cup of the sauce into the bottom of a 13 x 9" casserole dish. Layer three lasagna noodles over the sauce, then top them with about 1 cup of the meat mixture, a cup or so of the sauce and a palmful of cheese. Repeat these layers two times, topping the casserole with a layer of lasagna noodles. Spoon the remaining sauce over the noodles, sprinkle the remaining grated cheese over top. Cover with aluminum foil and bake the lasagna until the sauce is bubbling and pasta is baked through, about 45 minutes.
  • During the last ten minutes of baking, remove the aluminum foil to brown the cheese. Once out of the oven, allow the dish to rest a few minutes before serving.

Steps:

  • For Bolognese Sauce: In large pot heat butter over medium-high heat.
  • Add bacon and ham and saute until carmelized and light brown, about 10 minutes.
  • Add ground meats and cook over high heat until well browned and stirring constantly, about 20 minutes.
  • Add the onions, carrots, celery and mushrooms and cook until soft, about 5 minutes.
  • Add garlic, cloves and nutmeg to the pan and cook for 2 minutes.
  • Add wine and cook till almost evaporated.
  • Add stock, simmer over medium-high heat about 45 minutes or until sauce is thickened and flavorful.
  • Season to taste with salt and pepper.
  • Stir in the creamand parsley and adjust seasoning if necessary.
  • Set aside until ready to assemble.
  • Bechamel Sauce:In saucepan, melt butter over low heat and stir in flour, stirring constantly until smooth, about 2 minutes.
  • Slowly whisk in milk to blend together.
  • Set over high heat and quickly bring to a boil for 1 minute, stirring constantly.
  • Allow to cook for 5 minutes or so until floury taste is gone.
  • Remove from heat and add salt and nutmeg to taste.
  • To assemble:Preheat oven to 350.
  • Butter a large rectangular baking dish.
  • Spoon 1/2 cup of meat sauce onto the bottom of the dish.
  • Cover with 1 layer of cooked lasagna noodles.
  • Top with 1 layer of meat sauce, completely covering noodles, then add a light dusting of cheese.
  • Repeat layering in orders given until all have been used, ending with a topping of bechamel sauce and cheese.
  • Bake covered for 45 minutes with aluminum foil; then uncover and bake for 15 minutes until cheese on top is lightly golden brown.
  • Let rest for 10 minutes before serving.

Steps:

  • Cook and stir Italian sausage in a large skillet over medium-high heat until the meat is browned, breaking it into crumbles as it cooks, about 10 minutes. Drain excess grease. Stir onion and garlic into sausage and cook until onion is translucent, about 5 minutes.
  • Fill a large pot with lightly salted water and bring to a boil. Stir in campanelle and return to a boil. Cook pasta uncovered, stirring occasionally, until cooked through but still firm to the bite, about 10 minutes; drain.

Pumpkin Lasagna with Sausage image

Steps:

  • 1. In a skillet, cook the bulk italian sausage, diced onions and sage together on medium-high heat. The onions should be very tender and the sausage should develop some browning. Set aside to be added to the sauce later.
  • 2. In a large 5-quart pot on medium high heat, add pumpkin, sweet potato and chicken stock and stir well to blend ingredients thoroughly. Continue to add cream cheese, syrup/sugar, balsamic vinegar and spices and stir well. Taste sauce for seasoning and add salt/pepper if desired. Stir frequently until mixture starts to simmer and remove from heat. Add meat mixture to the sauce and stir together.
  • 3. Prepare lasagna noodles according to package directions. (I do this stove-top step last and I place the noodles in cold water so they don't stick together during the assembly of the lasagna.)
  • 4. Preheat oven to 350F. Oil a lasagna pan (a 13 x 9 x 2 inch pan is not quite large enough - but if you don't mind leftover noodles and sauce, it'll do just fine.)
  • 5. Drop a layer of the pumpkin-sausage sauce in the bottom of the lasagna pan. Cover with a single layer of noodles. Ladle another layer of sauce over the noodles. Sprinkle on a quarter-cup of parmigian, a quarter-cup of romano and about a half cup of cheddar-jack cheeses over the sauce.
  • 6. Continue layering noodles, sauce and cheese until the pan is full or you run out of ingredients. Place the lasagna pan on a baking sheet (to catch any spills or bubble-overs) and cook on the center rack of the oven for 30-40 minutes. Cheeses should be fully melted, edges should be bubbling. Remove lasagna from oven and let set for 5-10 minutes before serving.

  • 4. In a large pot of salted boiling water, cook lasagna noodles half the amount of time their package recommends. Drain and toss with a drizzle of olive oil to prevent them from sticking together.

  • In a medium frying pan low/medium heat add the olive oil, chopped shallot, chopped pumpkin, salt and pepper, stir to combine then cover and let cook until tender approximately 10-15 minutes, stir often to make sure it doesn't burn. Set aside.
  • In a medium pot on medium low heat, melt the butter, add the flour, salt and pepper stir until smooth then slowly add the milk, cook and stir constantly until it starts to thicken. Remove from the heat and add the pumpkin mixture and stir to combine. Bring the mixture back to a boil, stirring constantly for about a minute, remove from the heat then gently fold in 3-4 tablespoons of parmesan cheese.
  • Drizzle 1-2 tablespoons on the bottom of a 11 x 7 inch (28x18cm) baking pan. Spread a spoonful or two of sauce on the bottom of the pan, top with a layer of noodles, then sauce, shredded cheese, grated parmesan and repeat for 3-4 layers (depending on how many layers the ingredients will be divided by 3 or 4). Drizzle a little olive oil on the top of the last layer and bake for approximately 15-20 minutes or until bubbly and golden on top. Let sit for 10-15 minutes before serving. Enjoy!
