EMERIL'S TARTAR SAUCE
Awesome tartar sauce made by Emeril. Found on Emeril's web page. Is very good and tangy with just a little kick.

Steps:
- Put the egg, garlic, lemon juice, parsley, green onions, and relish in a food processor or blender and process for 15 seconds.
- With the motor running, pour the oil through the feed tube in a slow steady stream.
- Add the cayenne, mustard, and salt and pulse once or twice to blend.
- Cover and let stand in refrigerator for 1 hour before using.
- Best if used within 24 hours.

FRIED FISH FINGERS WITH TARTAR SAUCE
Steps:
- Preheat the oil in a large cast iron or heavy bottomed pot, over medium heat. Cut the fillets, horizontally into strips, 1/2-inch thick. Season the fish with salt and pepper. Combine the flours and season with salt and pepper. Dredge each piece of fish in the flour, coating completely. Dip each piece in the egg wash, letting the excess drip off. Dredge the fish for a second time in the flour, coating completely. Fry the fish in batches until crispy, about 3 to 4 minutes. Remove and drain on paper towels. Season with salt and pepper. Serve the fish with lemon halves and tartar sauce and garnish with parsley.
- Combine all ingredients in a bowl and stir to combine. Add lemon juice and salt, to taste. Refrigerate until thoroughly chilled.
CREOLE MEUNIERE SAUCE

- In a medium-sized nonreactive saucepan, combine the Worcestershire, onions, bay leaves, and lemons, and cook over medium-high heat. Mash the lemons down with the back of a spoon and bring mixture to a boil. Reduce heat to a simmer until mixture becomes slightly thick, about 8 to 10 minutes. Add cream and whisk to blend. Cook 1 minute. Add butter bit by bit, whisking constantly until completely melted and blended into the mixture. Add Creole seasoning and stir to incorporate. Strain sauce through a fine-meshed sieve or colander lined with cheesecloth. Garnish with scallions.
EASY ENCHILADA SAUCE

- In a medium saucepan heat oil, add flour, smoothing and stirring with a wooden spoon. Cook for 1 minute. Add chili powder and cook for 30 seconds. Add stock, tomato paste, oregano, and cumin. Stir to combine. Bring to a boil, reduce heat to low and cook for 15 minutes. The sauce will thicken and smooth out. Adjust the seasonings. Serve atop your favorite enchiladas.
GRILLED AMBERJACK SANDWICHES WITH SPICY TARTAR SAUCE
Steps:
- Heat a grill or grill pan to medium heat.
- Brush the fillets with the olive oil and sprinkle on all sides with the fish rub. When the grill is hot, place the fillets evenly spaced on the grill. Cook until the fish is just cooked through, about 5 minutes per side. Flip only once if possible.
- While the fish is cooking, combine the mayonnaise, cilantro, relish, garlic and a sprinkle of salt and pepper in a medium bowl. Start with a generous tablespoon of hot sauce, then stir and taste to assess the heat. If more is preferred, add up to 1 more tablespoon. Set aside.
- Slice the buns and place face-down on the grill until toasted, or toast in the oven. Spread the desired amount of the tartar sauce, around 2 tablespoons, on the top half of each bun. Place the grilled fish on the bottom halves.
- If desired, quickly grill the romaine leaves until some light charring occurs. Top each sandwich with 1 leaf and enjoy!
REMOULADE SAUCE

EMERIL'S CRISPY SHRIMP BURGERS
Haven't made this yet, but I'm passing this along for all the "Emeril" fans out there! These look mighty tasty indeed!

- Tartar Sauce: In small bowl, combine ingredients.
- Refrigerate 1 hour.
- Burgers: In a large skillet, melt butter over medium heat.
- Add onion, celery, bell pepper, salt and cayenne; cook until softened, 6 minutes.
- Add shrimp, cook 3 minutes, until opaque.
- Transfer mixture to large bowl; let cool slightly.
- Add garlic, scallion, 1 egg and 1/2 cup breadcrumbs; mix.
- Divide into 4 equal portions; shape into 4 patties.
- In shallow bowl, combine flour with 1/2 teaspoon creole seasoning.
- In another shallow bowl, beat remaining egg with 1 Tablespoon of water.
- In third small bowl, combine remaining 1/2 cup bread crumbs and 1/2 teaspoon creole seasoning.
- Dredge each patty in flour mixture, then egg, then crumbs.
- In nonstick skillet, heat oil over medium heat.
- Add patties cook 3 minutes per side, to brown.
- Drain on paper towels.
- Spread buns with tartar sauce.
- Fill with patty, lettuce and tomato.

TARTAR SAUCE
I haven't purchased tartar sauce in many years. We do not like any hint of sweetness, preferring the combination of dill pickle, lemon, onion and Worcestershire to flavor the sauce. This will keep a long time in the refrigerator. Note to World Tour participants - this recipe is included in the British category. Similar sauce recipes (making the mayonnaise from scratch, of course) go back to Medieval times, and have been found in British books as early as 1685. It's also wonderful served with fish and chips, if you aren't very fond of malt vinegar.

- Best if refrigerated for an hour before use.
