Steps:

  • Heat oven to 350 degrees F. Spray an 8x11x2-inch baking dish with cooking spray.
  • Pour chicken broth into a small frying pan, heat to simmer, add chicken breast, cover and simmer until no longer pink, turning once (approximately 25 minutes). Cool and shred.
  • In same frying pan, add onions and red pepper. Saute over medium heat until soft, approximately 5 minutes. Remove from heat.
  • In a large bowl, place chicken, onion-pepper mixture, beans, corn, cilantro, chilies, 2 cups of the cheese, and sour cream. Toss until thoroughly blended. Add tabasco, salt and pepper to taste.
  • Place 1/8 of mixture into center of each tortilla, roll and place in baking dish. When all 8 rolls are completed, pour Enchilada sauce over top and sprinkle with remaining 1/4 cup cheese. Bake for 35 minutes, or until sauce bubbles and enchiladas are heated through. Makes 4 generous servings of 2 enchiladas each.

  • Serves 6-6 I have doubled this recipe before- experiment around with the enchilada sauce-- I prefer one can of green sauce and 1 red sauce-- but you can use whatever you like-- also you can add more cheese on the top-- these really are yummy!
  • hope ya like them-- also you can use the hot enchilada sauce instead of the mild, we just use the mild because of my kids-- they love this recipe-- not to spicy for them.

2 (10 ounce) cans mild enchilada sauce (I use one of the green sauce and one red sauce)
2 cups chopped cooked chicken, you can buy the already chicken in the cans to save time
1/2 cup sour cream
2 (4 ounce) cans chopped green chilies, undrained
1/3 cup chopped green onion
1/4 teaspoon salt
2 cups shredded monterey jack cheese
10 flour tortillas (6-7")

SHRIMP FIESTA ENCHILADAS WITH CREAM SAUCE

Shrimp and vegetable medley wrapped in corn tortillias with creamy cheese sauce. I came up with this idea as I wanted to prepare an untraditional Easter dinner. It was hit with my family! It presented beautifully on the table. It was rich enough so that I really didnt need alot of extra dishes to accompany the main entree. I served them with a caesar salad, some spanish rice and black beans. This recipe makes approximately one dozen enchiladas.

ENCHILADA'S WITH FIESTA CREAM SAUCE

Awesome chicken enchiladas that my entire family loves. Great flavor and easy to prepare. I usually serve with a side salad or Spanish rice. Although verde sauce on it's own has some heat it is very mild when prepared with chicken in this dish.

  • Place the tomatillos, Serrano peppers, and garlic clove in a small saucepan and cover with water (about 4 cups). Cook at medium heat for about 15 minutes or until the tomatillos and Serrano peppers are cooked through.
  • While the ingredients for the green salsa are cooking, heat half of the oil in a medium-size frying pan at medium-high heat.
  • Lightly fry the tortillas, one by one, on both sides. Add the rest of the oil as needed. Do not allow the tortillas to get crispy, just fry them until they are soft and pliable. Place them on a plate and set aside.
  • Once the tomatillos are cooked, wait until they have lightly cooled. Place the tomatillos, peppers, garlic, and a ¼ cup of the cooking water in your blender. Puree to make a smooth salsa.
