Steps:

  • Microwave onion, chili powder, oil, jalapeno, garlic, coriander, and cumin in bowl, stirring occasionally, until vegetables are softened, about 5 minutes; transfer to slow cooker.
  • Stir tomato sauce and sugar into slow cooker.
  • Season chicken with salt and pepper; add to slow cooker, and coat evenly with sauce mixture.
  • Cover and cook until chicken is tender, 4-6 hours on LOW.
  • Transfer chicken to a large bowl; let cool slightly, then shred into bite-size pieces; cover to keep warm.
  • Let braising liquid settle for 5 minutes, then remove fat from surface using large spoon.
  • Toss shredded chicken with 1 cup braising liquid; add more liquid as needed to keep meat moist and flavorful.
  • Stir in lime juice and season with salt and pepper to taste.
  • *Filling can be refrigerated in airtight container for up to 3 days or frozen for up to 1 month; if frozen, let filling thaw completely before using.

I call this "Everyday Chicken" because it uses ingredients normally on-hand, can be modified to use what you do have, tastes wonderful, goes with anything, and is easy. Either marinate for a couple hours, or overnight and just pop in the oven for about an hour. Or, grill for a delicious, light chicken entree. Prep time includes marinating.

Steps:

  • In a large glass bowl (or other non-reactive material) mix onion, garlic, lemon juice, olive oil, white wine, Worcestershire sauce, Tabasco sauce, pepper, celery seed, and salt.
  • Marinate chicken in this mixture at least 2 hours (but if you have time, preferably overnight).
  • Bake covered at 350 degrees for 30 minutes; then uncover and bake another 30 minutes or until chicken is done (no pink, with clear juices).
  • This is also a fantastic and quick recipe for the grill!

  • Place chicken breasts in the bottom of a slow cooker. Pour in chicken broth and seasoned salt. Cover and cook on High until no longer pink in the center and the juices run clear, 3 to 4 hours, or on Low for 6 to 8 hours. An instant-read thermometer inserted into the center of the chicken breasts should read at least 165 degrees F (74 degrees C).
  • Remove chicken and shred with 2 forks.
