EXTRA HEALTHY BLACK BEAN BURGERS
Don't be fooled! These are also extra delicious! In addition to being full of veggies and heart healthy black beans, these also have the addition of cholesterol lowering oats. These are featured weekly in our home.

Steps:
- combine the first 10 ingredients in a bowl and mash together with a potato masher (or use the back of a large fork) just until only a few whole black beans are remaining. then stir for another minute with a large spoon to make sure the ingredients are well mixed.
- let the mixture sit while you heat 2 tbsp olive oil in a large frying pan.
- on a sheet of wax paper, spread out a 1/4 cup of the cornmeal evenly.
- divide the black bean mixture into 4 equal parts and begin flattening them into patty shape.
- press each patty onto the cornmeal and cover the tops with the remaining 1/4 cup of cornmeal.
- once they are coated with cornmeal, begin placing the patties onto the hot frying pan.
- cook for around 7 minutes per side.
- when finished cooking, allow them to sit on paper towels for a minute. then place on wheat buns and top with fresh guacamole or pico de gallo.
TEX-MEX BLACK BEAN BURGER
Just in time for grilling season comes this spicy recipe for Tex-Mex burgers. Once they are coooked, serve them with shredded lettuce and tomato-lime topping. mmmmmmm - good!!

- In a bowl, combine all topping ingredients; set aside.
- Heat grill on medium. In a large bowl, combine all burger ingredients , mix until just combined. Do not over mix.
- Divide mixture evenly into four and make patties 1- 1 1/2 inches thick. Grill burgers 5-7 minutes each side or until internal temperature reaches 170°F.
- Spread some guacamole, if using, half of each bun , top with shredded lettuce, burger and a few spoonfuls of tomato topping mixture.

- Divide into 6-8 equal portions and shape into patties.

BETTER HEALTHY BURGERS
Part animal, part plant protein, these burgers are nutritious and delicious! I make them as a large batch of 22 burgers that weigh 2.5 ounces raw and freeze the patties between sheets of wax paper in a zip-lock bag.

Steps:
- Cook 1/4 cup of dry Teff in 1 cup boiling water. Simmer on low boil until liquid is almost gone.
- Add the ground flax seed (3 Tablespoons) and chia seed (2 Tablespoons) to the hot Teff. Stir until you reach the consistency or thick oatmeal.
- Drain the liquid from a 15.25 ounce can of black beans with a strainer. Do not rinse the beans. Place the beans into a bowl and mash with a potato masher.
- Add the Teff mixture to the beans and mash together until well blended.
- Add the extra lean ground beef (I use 96% lean/4% fat) and mix together well.
- Add the extra lean ground turkey (I use 99% lean/1% fat) and mix well
- Add all seasonings and Mix until evenly combined.
- Spray hands with non-stick cooking oil spray (I use Olive Oil) and Roll into 2.5 ounce balls.
- Shape into patties.
- Fry on high in non-stick pan sprayed with cooking oil.
- Serve on a bun or lettuce wrap with your favorite condiments.
- Enjoy!

- Heat olive in a small pan over medium-high heat. Saute the onions and bell peppers for 3-4 minutes or until tender. Add the garlic and saute for another minute. Remove from heat and set aside to cool for at least 2-4 minutes.
- Drain and rinse black beans. Pat with a paper towel to remove excess water. Pour into a large mixing bowl and gently mash with a fork just until chunky. Add the breadcrumbs, eggs, cheese, sriracha, spices, and cilantro. Mix to combine.
- Cover the mixture and refrigerate for 15-20 minutes. This step will help the breadcrumbs or other grain absorb the excess moisture so they don’t fall apart.
- Once Burgers have set in the fridge, divide the mixture into 8 even patties and cook via the desired cooking method. Once cooked, assemble burgers with your favorite toppings and condiments. We served it with spicy mayo and air fryer fries.
