BLUEBERRY RICKETY EYEBALL PUNCH
This punch--a spookified version of a classic rickey--is a refreshing drink for kids after trick-or-treating. Add some gin, and it's an equally refreshing after-dark cocktail for adults.

- Stick 1 to 2 blueberries, depending on their size, into the cavity of each lychee. Place on a foil-lined baking sheet and freeze, about 1 hour. (Wait until the "eyeballs" thaw a bit before eating, so that you don't choke on them.) Stir together 5 tablespoons of the lychee syrup, the blueberry juice and lime juice in a bowl or pitcher until combined. Stir in the sparkling water and add the lychee eyeballs. If it is a bit tart for your taste, add the remaining tablespoon syrup. Serve in tall glasses over ice, spooning the lychee eyeballs into the glasses as you pour. For a grown-up twist, stir in the gin before adding the sparkling water. Enjoy!
EYEBALL MARTINI
Up the freak-out factor of your Halloween spread with a creepy eyeball cocktail. Mix up this festive vodka martini with pimento-stuffed green olives and whole black peppercorns.

- Push a peppercorn into center of each olive, tucking under pimento filling to resemble an eye. Place olives in a martini glass.
- Fill a cocktail shaker halfway with ice; add vodka and vermouth. Shake well and strain into glass. Add bitters to one side of glass and serve.

EYEBALL-TINI
Steps:
- For the cocktail: In a blender, puree the lychees with 1/4 cup of the reserved syrup until smooth. Freeze for about 1 hour to chill.
- For the blood drip glasses: On a plate, mix the corn syrup and food coloring until fully combined. Dip 4 coupe glasses a couple times in the corn syrup mixture, swirling to cover the rims. Turn the glasses right-side up, let the syrup drip down the sides and then set on wax paper to dry, about 5 minutes.
- For the lychee eyeballs: Insert a blueberry into the hole of the 4 reserved lychees.
- Finish the cocktail: Add 3 tablespoons of the chilled lychee puree to each of the blood drip glasses. Fill to the top with ginger beer and a splash of lychee juice. Stir gently.
- Place lychee eyeball into each drink and serve.
