Steps:
- Cream together white sugar and shortening.
- Beat in the eggs, then stir in sour cream and vanilla.
- Add flour, baking powder, baking soda, and salt.
- Stir until just wet, then pour half the batter into a well greased bunt pan Sprinkle on half of the topping mixture.
- Layer the other half of the batter ontop and then the rest of the topping.
- Bake at 350 degrees F for 40-50 minutes or until a toothpick pulls out clean.

- Add vanilla.
- Add eggs, one at a time, beating well after each addition.
- Combine flour, baking powder, soda and salt.

- Beat cake mix with coffee, oil and eggs in large bowl with mixer until blended; pour into 2 greased and floured 9-inch round pans.
- Combine brown sugar and cinnamon in medium bowl. Stir in coconut and nuts; sprinkle over cake batter.
- Bake 30 min. or until toothpick inserted in centers comes out clean. Cool 10 min. Remove cakes from pans to wire racks; cool completely.

CINNAMON TWIST COFFEE CAKE
I got this recipe over 40 yrs ago from a Fleischmann's Yeast Cookbook, The section is called "Rising on Ice" I love it because I do all the work the day or several hours before and just bake it when I want it really fresh & warm from the oven!

Steps:
- In large bowl mix together 1 3/4 cups flour, 1/2 cup sugar, salt & yeast.
- Combine milk, water & 1/4 cup butter in small bowl. Heat til very warm (120 - 130). I do 90 seconds in micorwave. Butter does not need to melt. Gradually add to dry ingredients. Beat at medium 2 minutes, Add the egss & 1/2 cup flour and beat on high 2 minutes. Switch to dough hook or add by hand, enough flour to make a moderately stiff dough. If adding raisins, you may do so now. Knead until smooth & elastic in mixer on by hand on floured board.
- Place in greased bowl, cover & let rise in warm place 20 minutes.
- Divide dough in half. Roll each hald into a 9 x 12 inch rectangle.
- Spread with melted butter.
- Sprinkle with mixture of the remaining 3/4 cup sugar & cinnamon.
- Fold from 9" side- 3" over the center of the sqaure. Then fold the other side over 3" so you will have it folded into thirds (3 layers)it will be 3" x 12".
- Cut into 12 one inch slices. Take each slice and pinch end to seal. Tightly twist your slice and place into a greased 9 " square pan. (2 rows of 6). Repeat with other half.
- Cover with sprayed or lightly oiled wax paper. Then top with plastic wrap.
- Chill for 2 - 24 hours.
- When ready to bake, remove from refrigerator. Uncover. Let stand at room temp for 10 minutes.
- Bake at 375 for about 25 - 30 minutes. Serve drizzled with powdered sugar glaze. May be separated & served individually or cut as a coffee cake. Enjoy!

- Cream together sugar, vanilla and margarine.
- Add eggs and milk; beat well.
- Mix flour, baking powder and salt.
- Slowly stir in the dry ingredients (do not overhandle).
- Grease a 9x9-inch pan and pour in half of the batter.
- Top with half of the nut mixture.
- Pour in remaining batter.
- Top with remaining nut mixture.
- Bake in 375°F for about 25 minutes or until a knife comes out clean when inserted in the middle.
- Cool for 10 minutes and then remove from pan and cool on a wire rack.
DELUXE COFFEE CAKE
This is a cake I would wake up to periodically as a kid. It will send hypnotic aroma waves through the whole house, waking everyone up. As far as the process of making this cake goes, I really like to begin by making the topping. Combining the flavors that will top the cake provides motive to hurry and bake the cake and get to the eating part!

- For the topping: Line a baking sheet with parchment paper. In a medium bowl, combine the nuts, flour, sugars, cinnamon and salt. Stir to blend. Stir in the butter. The topping should form sandy clumps. Sprinkle the topping onto the baking sheet to break it up into smaller clumps. Refrigerate.
- For the coffee cake: Preheat the oven to 350 degrees F. Use butter to thoroughly grease the bottom and sides of a 13- by 9-inch baking pan. Set aside.
- In the bowl of an electric mixer fitted with the whisk attachment, cream the butter and granulated sugar together until light yellow and smooth, 5 to 8 minutes. Alternatively, this can be done with an electric hand mixer. Add the eggs, one at a time, and beat until thoroughly integrated.
- Remove the topping from the refrigerator so it has a few minutes to come to room temperature before baking. Meanwhile, sift together the flour, baking powder, baking soda and salt. In a separate bowl, whisk together the buttermilk and yogurt until smooth. Turn the mixer on low and alternate, adding some of the flour mixture with some of the sour cream mixture. When all has been mixed, give the sides and the bottom of the bowl a scrape and blend to make sure the batter is thoroughly integrated. Transfer the batter to the greased baking pan, spreading it out evenly. Liberally sprinkle the cake with all of the topping. Take care to cover the whole top. Put the pan in the center of the oven and bake until a toothpick inserted in the center comes out clean, 40 to 50 minutes. Remove the cake from the oven and allow to cool for 30 minutes before serving.
COFFEE COFFEE CAKE
Steps:
- Preheat the oven to 350 degrees F. Spray and line with parchment a 9-by-9-inch baking pan; spray the parchment as well.
- For the crumb topping: In a medium bowl, mix the flour, brown sugar, cinnamon, instant coffee powder and salt. Add the melted butter and mix until crumbs form that you can clump together in your hand. Set aside.
- For the cake: In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, salt and cardamom. In a smaller bowl, whisk together the coffee and sour cream until smooth.
- In the bowl of an electric mixer fitted with the paddle attachment, beat the butter and sugar together until light and fluffy. Add the eggs, one at a time, mixing until each is well combined. Then add the vanilla extract and beat until the mixture is light and fluffy.
- Starting and ending with the dry ingredients, alternate adding the flour mixture and the coffee mixture to the stand mixer; mix each addition well, scraping the bowl each additions.
- Pour the batter into the prepared baking pan and top with crumb topping, spreading it evenly. Bake for 45 minutes or until a toothpick comes out clean.
- Remove the cake from the oven and allow to cool for 20 to 30 minutes before cutting and serving.

- Preheat oven to 350 degrees. Grease an 8-inch square baking pan. In a medium bowl, combine flour, 3/4 cup sugar, baking powder, and salt. Using a pastry cutter or two knives, cut in shortening until the mixture resembles coarse crumbs. Put 1/2 cup of the mixture in a small bowl, stir in remaining 2 tablespoons sugar and cinnamon, and set aside. Stir egg and milk into remaining flour mixture.
- Spoon batter into the prepared pan, and smooth the surface. Pour melted butter over the top. Sprinkle reserved crumb mixture evenly over the butter. Bake the cake until a toothpick inserted in the center comes out clean, about 35 minutes.
CINNAMON LIME COFFEE CAKE
A coffee cake with the haunting flavor of lime. This is a nice change from all the lemon and orange based coffee cakes out there. Pecans or macadamias work just as well as the walnuts in the cinnamon layers. Note that the recipe calls for 3/8 cup finely chopped nuts, NOT 3/8 cup nuts finely chopped. Big difference. And yes the bake time for loaf tins is the same a Bunt pan.

- Place rack in the center position in the oven and preheat the oven to 350.
- Lightly mist a 12 cup Bundt pan or 2 loaf tins with vegetable oil spray, then dust with flour.
- Shake out the excess flour.
- For the filling, combine the brownsugar, cinnamon, and chopped nuts.
- Stir until well mixed.
- Set aside.
- Place the cake ingredients in a large bowl.
- Blend, with an electric mixer on low speed, for 1 minute.
- Stop mixer and scrape down sides of bowl.
- Increase speed to medium and beat for 2 minutes.
- Pour 1/3 of the batter into prepared pan (s).
- Scatter 1/2 of the filling over the batter.
- Pour another 1/3 batter over the filling.
- Scatter the remaining filling over the batter.
- Pour last 1/3 of batter over filling and smooth out surface.
- Place pan in the oven.
- Bake the cake (s) until golden brown and cake (s) spring back when lightly pressed with a finger, 55 to 60 minutes.
- Remove the pan (s) from the oven and place on a cooling rack for 20 minutes.
- Run a long sharp knife around the edge of the cake (s) and invert onto a rack.
- Allow to cool completely.
- 30 minutes more.
- Meanwhile, prepare the glaze.
- Place the glaze ingredients in a small bowl and stir until smooth.
- Spoon glaze over the top of cooled cake so that it drizzles down the sides.
- Slice and serve.
- Store covered.
- Will keep up to a week at room temperature.
- Will heep frozen for 6 months.

- Preheat oven to 375 degrees F (190 degrees C). Lightly grease and flour a 9x5 inch baking pan.
