Turkey Burgers image

Steps:

  • Preheat the oven to 375 degrees F.
  • Smash the garlic cloves, sprinkle with some salt, and, with the flat side of a large knife, mash and smear the mixture to a coarse paste. Whisk the garlic with the balsamic, Worcestershire, and hot sauce in a small bowl.
  • Crumble the turkey and beef into a large mixing bowl. Pour the garlic mixture over the meat and form into 4 (5-ounce) burgers. Cover and set aside while you cook the onions.
  • Meanwhile, heat 1 tablespoon of the olive oil in a skillet over medium-high heat. Add the onion and cook, stirring occasionally, until browned but not mushy, about 15 minutes. Season the onions with the remaining teaspoon of balsamic and salt and pepper, to taste.
  • Heat a large nonstick skillet over medium-high heat for a minute. Brush 1 side of the burgers with the oil and season with salt and pepper, to taste. Cook seasoned side down until browned, about 2 minutes. Brush and season the top of the burgers, flip and cook until other side is brown, about 2 minutes more.
  • Transfer burgers to a baking dish and bake until an instant-read thermometer inserted sideways into the burgers registers 160 degrees F, about 5 minutes. Place the burgers on the buns or in pita and let rest for a few minutes. Serve with the caramelized onions and garnishes of your choice.

  • Prepare a grill for medium indirect heat (for a gas grill, leave one or two burners on low or off; for a charcoal grill, bank the coals on one side of grill).
  • Combine the avocado, sour cream, hot sauce, lime juice, 1 tablespoon of the Worcestershire sauce and 1/2 teaspoon salt in a medium bowl and mash together with a potato masher or the back of a fork. Stir in the cilantro, cover and set aside.
  • Combine the oil, bell peppers, onion, jalapeno, 1 tablespoon of the chile powder, 1 teaspoon salt and several grinds of black pepper in a large bowl and toss to combine; set aside.
  • Combine the beef, remaining 1 tablespoon Worcestershire sauce, remaining 1 teaspoon chile powder, 1 teaspoon salt and several grinds of black pepper in a large bowl and mix well. Divide the mixture into fourths and shape into patties.
  • Lightly brush the grill grates with oil. Put the bell pepper mixture in an open grill basket and cook over direct heat, tossing frequently, until the peppers and onions are golden and tender, 12 to 15 minutes. Move the basket over indirect heat. Put the patties over direct heat. Grill the patties until marked on the bottom, about 3 minutes. Flip and cook about 2 minutes, then top each patty with 1 slice of pepper jack cheese. Cover the grill and cook until the cheese is melted and the patties are marked on the other side and slightly firm, about 1 minute more for medium rare. Remove the patties and pepper mixture to a serving platter.
  • Spread the guacamole on both sides of the buns and top with the patties and pepper mixture.

Steps:

  • Place minced turkey in a mixing bowl and add the lime zest, onion, garlic, coriander, cumin, paprika and chilli flakes.
  • Once mixed thoroughly, add the lime juice and salt and pepper and mix until all the juice has been absorbed. They will be slightly wet but this is ok.
  • Shape the mixture into 4 patties. You can make them any size you want so the number of patties is subjective.
  • Heat the oil in a heavy based frying pan on a medium high heat. Once temperature had increased, add the burgers and cook for 5 minutes on each side until cooked all the way through. Place a slice of mexican cheese on top of the burgers whilst they are cooking so the cheese melts over the top.
  • Heat the fajitas as per pack instruction. To make a pocket for the burgers, fold in half and then half again. Stuff the pocket with lettuce and add the burger when cooked. Serve with sour cream.

  • Heat the bbq or grill on high.
  • Cut 6 pieces of wax paper big enough for the individual burgers to make it easier to put on the grill.
  • In a large bowl, combine all of the spices and mix. Add the ground chicken and combine just until blended, do not over mix.
  • Divide the mixture into 6 equal sized balls then place them on the square of wax paper and gently press into a patty making a dent in the centre of each one.

(You can totally use a grill pan in the house which is what we did the second time around, and it worked perfectly). Pat out each patty, leaving a small indentation in the center to promote even cooking. Season with salt and pepper. Place the burger on the grill, season the other side and cook for 3 to 4 minutes per side or until desired doneness. The last minute of cooking, place the cheese on each burger and close the lid so it can get all melty.
  • Place the burger on each bun, top with loads of onions and peppers, and a couple pinches of chopped cilantro. Enjoy!
