NO-BAKE UNICORN FUDGE

No-Bake Unicorn Fudge image

Steps:

  • Line an 8-by-8-inch baking dish with foil, leaving an overhang on all four sides. Divide the 2 containers of vanilla frosting equally between 4 microwave-safe bowls. Microwave each bowl of frosting until liquid, 20 to 30 seconds. Put each color of melting candy in a separate microwave-safe bowl. Microwave each color in 30-second intervals, stirring in between each, until melted and smooth. Pour each color of melted candy into a bowl of frosting and mix well. Quickly spoon each color into the prepared baking pan, swirling the colors together as you work. Tap the pan on a work surface to level the candy, then cover the top with colorful sprinkles. Gently press the sprinkles down into the fudge with your hands. Refrigerate until set, at least 1 hour. Lift the candy from the pan using the overhanging foil edges, remove the foil and cut into squares. If you like, package the fudge in small windowed boxes and tie with ribbon.

Two 16-ounce containers vanilla frosting
1 cup purple melting candy wafers
1 cup pink melting candy wafers
1 cup blue melting candy wafers
1 cup yellow melting candy wafers
1/3 cup multicolor sprinkles
1 tablespoon metallic sprinkles

My neighbor taught me how to make this. She has been making it for years and people are always asking her for it. I have butterscotch chips down as the ingredient but any kind of chips work, chocolate melt faster.

Steps:

  • 1. Mix all ingredients in a microwave safe bowl
  • 2. Cook on high for one minute
  • 3. Stir cook for 15 seconds stir repeat until it thickens careful not to let it boil or it will taste scorched.
  • 4. spread into 8 in square pan place in the fridge for at least an hour over night works best. A slightly damp spatula works best to spread.
  • 5. Cut to serve, store in fridge.

CHOCOLATE FUDGE

Steps:

  • Line an 18cm square tin with greaseproof paper.
  • Put the milk, sugar and butter in a heavy-based saucepan. Heat gently, stirring continuously with a wooden spoon, until the sugar has dissolved and the butter has melted.
  • Bring to the boil for 15-20 mins, still stirring all the time. The mixture will bubble up - when it does, take it off the heat and keep stirring it until it sinks back down. Then return it to the heat.
  • Start to take the temperature after about 15 mins (continuing to stir or it will burn on the bottom). The time it takes to come up to temperature may vary, particularly in a cold kitchen. Once it reaches 115C on a temperature probe, remove it from the heat and stir in the vanilla extract and a good pinch of sea salt. Leave to cool for 5 mins.
  • Stir in the chopped chocolate and the mixture and keep stirring until the chocolate has melted. Quickly pour the mixture into your prepared tin and leave to set at room temperature.
  • Before the fudge has completely set, you can add rows of different toppings like nuts, toffees or mini chocolate buttons - just scatter them over the surface and gently press into the fudge until they stick. Make sure the fudge is only slightly warm when you do this - if it's too hot the toppings can melt. Once set, cut the fudge into small pieces and store in a sealed container.

I double the recipe and put in a glass baking dish (9x13 inches). Nice for holidays . . . Keep it for a secret and family and friends will think you worked forever on it . . . (smiles). You can also use peanut butter chips and make peanut butter fudge.
