FAMILY REUNION BAKED MACARONI AND CHEESE
When I was growing up, mom always dragged us to the family reunions. I always looked forward to the baked macaroni and cheese the ladies would bring. I always tried them all! This is the first time I have attempted to make home-made baked macaroni and cheese. I combined a few recipes and came up with this one. It is creamy with a crispy topping.

Steps:
- Cook pasta, only al-dente. You will be cooking it in the oven, so you don't want to overcook it. Rinse with cool water and drain well. Return to pan with a little butter to prevent sticking and set aside.
- Pre-heat oven to 375 degrees.
- Melt 6 Tbs. butter over medium heat in large saucepan. Add flour, salt, black pepper, dry mustard, and paprika. Stir constantly for 3 minutes. Add milk, whisking constantly for 10 minutes, or until sauce thickens. Remove from heat.
- Remove 1/4 cup of the sauce and slowly stir into your beaten egg to temper the egg. Add the egg mixture to the sauce.
- Add 4 cups of the shredded cheese to the sauce, return pan to heat, stirring until cheese is melted. Pour sauce over pasta.
- Pour 1/2 of the pasta into a 9 X 13 casserole dish, then sprinkle with 1/2 of the remaining shredded cheese. Repeat with the remaining pasta and cheese.
- Melt 2 Tbs. butter and combine with your bread crumbs. Sprinkle on top of pasta.
- Bake at 375 degrees for 30 minutes, or until top is bubbly and starting to brown.

MOM'S FAVORITE BAKED MAC AND CHEESE
This is a macaroni and cheese I first made 3 years ago when I was in California. When I got back to Texas I made it for my mom. This is now her favorite baked macaroni and cheese. She begs me to make it when I come to visit.

Steps:
- For the macaroni: Preheat the oven to 350 degrees F. Butter a 2-quart casserole dish.
- Bring 4 quarts of water to a boil in a large saucepan. Add the salt and macaroni. Bring the water back to a boil and cook the macaroni until tender, about 12 minutes. Drain well.
- For the cheese sauce: Meanwhile, melt the butter in a 1-quart saucepan. Using a wire whisk, stir in the flour and salt, stirring and cooking over medium heat until the roux bubbles and the flour turns pale brown, about 3 minutes. Slowly whisk in 1 cup of the milk and then whisk in the remaining 1 cup milk. Continue to cook, stirring constantly, until the sauce thickens. Add the cheese and stir until it melts. Add the drained macaroni to the cheese sauce and mix thoroughly.
- For the topping: In a small bowl, stir the breadcrumbs with the butter until the crumbs are moistened.
- Transfer the macaroni and cheese to the prepared baking dish and top with the buttered breadcrumbs. Bake until the dish bubbles around the edges, about 15 minutes.
BAKED MACARONI AND CHEESE
A friend of mine sent this recipe to me when I got my first apartment, because she knows how much I hate cooking! It's really easy -- even I can make it -- and tastes great. I'm not sure where she found the recipe, but it included the note 'Good source of protein, vitamin A, B group vitamins, calcium.'

- Preheat the oven to 375°F and set an oven rack in the middle position. Grease a 2-qt baking dish with butter.
- Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, or just slightly underdone. (It will continue to cook in the oven so you don't want it fully cooked.) Drain the pasta and rinse it with cold water.
- Meanwhile, melt 3 tablespoons of the butter in a medium (2-quart) pot over low heat. Add the flour and cook for 2 minutes, stirring with a whisk. While whisking, gradually add the milk. Bring to a boil, then reduce the heat to low and cook, uncovered, for a few minutes more, until thickened and smooth. Off the heat, whisk in the Gruyere, Cheddar, 1/4 cup Parmigiano-Reggiano, salt, pepper, and nutmeg. Add the cooked pasta and stir well. Pour into the prepared baking dish and set aside.
- In a small sauté pan over medium heat, melt the remaining tablespoon of butter. Add the panko and cook, stirring often, until golden brown. Stir in the herbes de Provence or thyme. Sprinkle the toasted panko mixture over the pasta and cheese sauce, followed by the remaining 2 tablespoons Parmigiano-Reggiano. Bake for 25 to 30 minutes, or until bubbly and golden brown.
