AIR FRYER FRIED SHRIMP
These air-fryer shrimp are perfectly crispy and easy to make without the hassle of heating up a large pot of oil. Serve with our spicy remoulade, or substitute any of your favorite condiments for dipping.

- For the fried shrimp: Spray the basket of a 3.5-quart air fryer with cooking spray and set aside. Pat the shrimp dry between a couple paper towels, then season with a pinch of salt and a few grinds of black pepper.
- Whisk the flour with 3/4 teaspoon salt and few grinds of pepper in a shallow bowl or baking dish. Whisk the eggs with a pinch of salt in another shallow bowl. Add the panko to a third shallow bowl. Dip a shrimp in the seasoned flour, shaking off any excess, then dip in the beaten eggs. Dredge in the panko, turning until evenly coated. Transfer to a large plate or a rimmed baking sheet and repeat with the remaining shrimp.
- Preheat the air fryer to 385 degrees F. Working in batches, place some of the shrimp in a single layer in the fryer basket, then spray lightly with more cooking spray. Cook until the shrimp are golden brown and cooked through, flipping halfway through, about 10 minutes.
- For the spicy remoulade sauce: Meanwhile, stir together the mayonnaise, pickled jalapenos, mustard, ketchup, hot sauce and scallion in a small bowl until smooth. Serve with the fried shrimp for dipping.
AIR FRYER COCONUT SHRIMP

- Pulse the coconut and panko in a food processor until finely chopped and uniform in size. Transfer to a shallow bowl.
- Whisk the flour with 3/4 teaspoon salt and few grinds pepper in another shallow bowl or a baking dish. Whisk the eggs with a pinch salt in a third shallow bowl. Dip a shrimp in the seasoned flour, shaking off any excess, then dip in the beaten egg. Dredge in the coconut-panko mixture, turning until evenly coated. Transfer to a large plate or a rimmed baking sheet and continue until all the shrimp are coated.
- Preheat the air fryer to 385 degrees. Working in batches, place some of the shrimp in the fryer basket in a single layer, then spray lightly with more nonstick cooking spray. Cook until the shrimp are golden brown and cooked through, flipping halfway through, about 10 minutes.
- Serve the coconut shrimp with some sweet chile sauce for dipping.
FANTAIL SHRIMP

- Rinse, dry, shell, and devein the shrimp if necessary, but leave the tails on. Split the shrimp along the inner curve, but do not cut all the way through. Spread each shrimp out flat and tap with the broad of a cleaver or knife. (Cutting along the inner curve prevents the shrimp from curling out of shape during the cooking.)
- Make the marinade by combining in a bowl the ginger, garlic, and oil. Season shrimp with the marinade, cover and chill 30 minutes.
- Make the batter by measuring out the dry ingredients into a mixing bowl and then adding the liquid ones, singly and little by little, stirring until the mixture is a smooth, thick batter. Fold in the sesame seeds last. Place the batter by the shrimp near the stove.
- Heat the wok or heavy, deep pot; then add and heat the oil until a drop of batter foams instantly, about 375 degrees F. Lower the heat a little. Then hold 1 shrimp by its tail and dip it into the batter to coat evenly; slip it into the hot oil. Repeat rapidly with the rest of the shrimp and deep-fry them for 3 minutes. Turn the shrimp constantly, with a gentle motion, after they're all in the oil. When they are golden brown, remove them with chopsticks, a skimmer, or a slotted spoon to paper towels to drain.
- Arrange the shrimp on a serving platter and sprinkle a little roasted salt-pepper on top. The shrimp may be done 10 to 15 minutes in advance and kept hot and crisp in a 200 degree F oven. Or decrease the frying time by 30 to 45 seconds; then drain on paper towels. When ready to serve, refry until brown and crisp, about 30 seconds.
COCONUT SHRIMP

- Heat 2 inches oil over medium high heat. A cube of bread should brown in a 10 count when oil is ready.
- Season bread crumbs with salt, cayenne pepper and five-spice powder. Cut the lime into wedges and reserve.
- Toss coconut with seasoned bread crumbs to combine. Lightly beat the egg whites. Dip shrimp in the egg whites, then coat with the coconut breading. Fry shrimp 5 minutes in hot oil until evenly golden and crispy. Garnish with lime wedges and serve.
- TIMING: To serve all of the courses together, a mix-n-match, family-style presentation, you can bread the shrimp and wait to heat oil and fry when you are ready to put the chicken stir-fry in the pan. Or, for separate courses, serve the shrimp with the salad, have your rice cooking and your ingredients prepped for the stir-fry, then stir-fry the chicken only when guests are ready for it.
FROZEN SHRIMP IN THE AIR FRYER
I would love to say I plan every meal down to the last detail. Not! Sometimes, I have to create a "dinner on the fly," doing a quick run down of likely ingredients while I am stuck in traffic. - Preheat an air fryer to 400 degrees F (200 degrees C) for 5 minutes.
- While the air fryer is heating, separate frozen shrimp if necessary and knock off any ice crystals that may have developed with a spoon.
- Place a single layer of frozen shrimp, about 1/2 pound, in the cooking area of the preheated air fryer and cook for 4 minutes.
- Combine melted butter, seafood seasoning, and cayenne pepper in a small bowl.
- When the timer sounds, brush each shrimp with seasoned butter, turn over, and brush the other side as well. Air-fry until shrimp are bright pink on the outside and the meat is opaque, 3 to 4 more minutes. Repeat with remaining shrimp.
