ZUCCHINI-BEAN FRITTERS #RSC

Ready, Set, Cook! Reynolds Wrap Contest Entry. My mom got me to eat vegetables this way, then I with my children and now my daughter with hers--due to the black beans, this recipe is a good source of Iron. My daughter even packs a few in her daughters lunch bag.

Zucchini-Bean Fritters #RSC image

Steps:

  • in large bowl, beat two eggs, add tsp each of salt/pepper. Add 2 tbs og heavy cream, tsp of oregano.
  • Grate 2 zucchini, chop one red pepper. Add drained can of black beans and 1/2 cup of flour. Stir and drop by tbs. on pan that has 4tbs of vegatable oil.
  • Fry gently, turning once and then place each drained fritter on pan 9x12 lined with Reynolds wrap.
  • Bake for 10-15 minutes in 350 oven. Enjoy, can be eaten cold.

  • In a bowl, whisk the milk and egg together; stir in the flour, baking powder, and salt until the mixture is smooth.
  • Heat the oil in a heavy deep skillet or saucepan over medium heat until it is hot enough to sizzle and brown a crust of bread (about 365°).
  • Using tongs, dip the figs, one at a time, into the batter, turning to thickly coat.
  • Fry 1-2 fritters at a time in the hot oil until golden all over, about 2 minutes per side.
  • Drain the fritters briefly on a double layer of paper towels; then transfer to a wire rack and sprinkle generously with powdered sugar; serve warm.

  • In a large mixing bowl combine the flour, cornmeal, breadcrumbs,Hidden Vally Original Ranch Mix and baking soda. Gently stir in the egg yolks, buttermilk and melted butter, Add chopped chives, shredded chicken and roasted peppers.
  • Beat egg whites until stiff peaks form, gently fold into the batter. Heat canola oil in a dutch oven or large deep pot to 350*F. If you lived in Kansas City, Mo from the late 60's to mid 90's to probably had gone to Stephenson's Restaurants the original being at 40 Highway and Lee's Summit Road. They have long since been closed, however I was able to purchase a recipe book called Stephenson's Restaurants Receipts Old Family Secret Recipes that have some of the original restaurants popular dishes. The Apple Fritters were a signature dish,. This is a wonderful recipe and I am glad I was able to share it again with those who remember it.

Steps:

  • Beat egg, In a mixing bowl combine the milk, egg, and melted margarine. Add the orange juice, rind, chopped apples (skins can be left on ) and vanilla.
